Triple Chocolate Fudge Cake Bars


If there's one thing I love doing, it's finding the 
excuse to bake. And chocolate cake is my specialty!


Triple Chocolate Fudge Cake Bars

Cake Base:

1 cup boiling water
1 cup granulated sugar
1/3-1/2 cup butter or margarine
1/2 cup low fat sour cream
(chopped finely)
(chopped finely)
1 whole egg + 2 large egg whites
1.5 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt


Chocolate Icing:

1/2 cup powdered sugar
1/4 cup unsweetened cocoa
1 ounce bittersweet chocolate
(finely chopped)
1/2 ounce white chocolate
(finely chopped)
3 Tbsp milk or soymilk
3 tsp butter or margarine
A Pinch salt


Cake Directions:

A. Preheat oven to 350 degrees fahrenheit
B. Coat 2 (8 inch) square baking pans with cooking spray or butter and sprinkle a little cocoa on the bottom to prevent sticking
C. Comine the cocoa powder with boiling water, add bittersweet and white chocolate and stir until smooth
D. In a large bowl, place sugar, butter and vanilla. Beat with a mixer on medium for about a minute. Add the egg and egg whites slowly continuing to beat
E. Add sour cream and continue mixing on medium for another minute-2 minutes
F. In a separate bowl, mix together the flour, cocoa powder, sugar, and dry ingredients with a whisk
G. Slowly pour in the wet ingredients to the dry, stirring then beating until just starts to combine
H. Bake for about 30 minutes, checking with a toothpick to make sure it comes out clean. Remove and let cool.



Icing Directions:

A. Combine sugar, chocolate and the rest of the ingredients in a saucepan set over low heat
B. Cook and frequently stir for about 2 minutes
C. Pour and spread 1/2 of the icing on one cake and 1/2 on the other (unless you made one giant cake) and spread out evenly
D. Let cool in refrigerator for best results
E. (Optional) Top with melted chocolate and shaved white chocolate for decoration
F. Cut with a sharp knife into rectangle bars


I got my mom to help me with the icing because I 
am horrible add it. But that can be our little secret ;)

Triple Chocolate Fudge Cake Bars, oh my word Kelsey you sure know how to tease a soul. I would jump right through this computer screen if I thought for one minute I could actually stuff that piece of decandence in my mouth!!!

I love the way the frosting has some weight to it and it stands nice and tall on the cake. It reminds me of Entenmann's cakes before they went corporate!
