Raw Summer Salad


Instead of a regular post,
i'm posting a quick and delicious
 Raw Summer Salad.

My family and friends are always demanding asking me to make them one. It's the type of salad that takes the guess-work and handy-work out, and is truly quick, simple, and fun!

I prefer a mix of dark and light leafy greens. The best combination is a few handfuls of organic spring mix, romanine lettuce, cucumber, red onion, and tomato

For the dressing I mix together lemon juice from 1 lemon, a tablespoon of stone ground mustard, stevia, black pepper, and a pinch of salt

The secret ingredient to this delicious salad...

Avocado!

I scoop in one ripe avocado and break it into pieces. It can get kind of messy, but messy is good!

Nom Nom.

Oh but before you think we're finished, you have to roll up your sleeves and "massage" the salad with your hands. This breaks up the avocado a bit to make it "creamy" while still leaving some chunks in there.

 This is something I know you guys will love!
But don't just take my word for it, you have to try it okay?

100 times cooler than the Sidney Health Fair.

You know how I love avocado, but I seriously think sometimes the red onion really makes a good salad- totally gives it a bit of a bite!

My salads are never complete without avocado! I love your idea to massage it in so that it gets all creamy. What could be better than getting avocado in every bite? :D

That looks so wonderful, Kelsey. I really want to make it! Is there a difference between stone ground mustard and regular mustard?? haha.

You're right, massaging is the key. When I discovered this, I realized why my mom's salads always tasted better the next night. The avocado had time to break down.

I love that you mix the avocado into the salad with your hands. It must taste so good that way, although I do enjoy just big chunks of avocado right on top of my salads too.

I'm crying inside because that festival looks amazing and I'm so close let so far from Victoria. If there were no ferries I would be there in a 1/4 of a heartbeat.

PS. That salad looks pretty amazing too and I am definitely trying out that dressing.
