Hope all is well with the wheat experimentation.

Those look delicious! Do you think they would be okay with gluten free flour instead of spelt?

WOW! Lovely cookies! I just used GF flour for the first time last night and was a bit disappointed...I'm wondering if all flour substitutes will lend a different flavor?

HUGS honey!

Oooh, now that's literally one good looking cookie! Love the use of cane sugar in the recipe. Although I'm allergic to peanuts, my kids aren't, and this is making me drool. Thanks for sharing the recipe Kelsey.

You should not be allowed to post pictures of things that look this yummy. :) Kidding, but seriously. PB and chocolate is my favorite dessert flavor combo; I don't know if I have had it in vegan cookie form, but I'm planning a baking spree soon and these might have to go on the list! Yum.
