Oven Roasted Vegetables

My dinner last night was fabulous! Good enough to blog about IMO :)

I rarely eat Tofu, and when I do, it's usually when someone else makes it...

I cubed up some Extra Firm Tofu and mixed it with kabocha squash,
broccoli, asparagus, brussel sprouts, green beans, leeks, kale, and onion

Before baking, I made a quick marinade of mustard, balsamic vinegar, dill,
nutritional yeast, garlic powder, cayenne, and black pepper, which I poured on top...

Baked for 45-50 minutes @ 385

After passing time watching Oprah until it was done,
my Oven Roasted Vegetables looked like this...

Now I understand why you guys told me, "Kelsey, you need to try baked kabocha squash!"

Lastly, just a reminder that you still have until Friday

sometimes there is nothing better than roasted veg with a good marinade. and yours sounds like a winner!

oh if you like it roasted, try steamed kabocha. it's like friggin dessert! cut into chunks and steam for 15mins, then pop your bowl of steamed kabocha into the freezer for 10mins and then take it out and enjoy. the texture is out of this world! i rarely eat tofu either but i kinda want to now haha. thanks!

I'm just getting into tofu - roasting/baking it seems the nicest way to have it. You're veggies look fab - I've never had roasted broccoli before, I'm definitely going to give it a go.

K that dressing sounds/looks awesome!! Do you use a recipe or just eyeball everything? I love that your tofu is made in victoria :)

Kels,
Thanks for checkin in on me at my blog, girl :) I really need to write an update soon, but life has been crazy since I got back to school! It's good and bad, but I'm hanging in there and trying to make it all happen. Thanks for the support. I don't always get a chance to write, but I love catching up on your blog.
As always, the eats look great, and am so proud of youu :) Always here to lend an ear!

Thanks for letting me know all your fave recipes from GC! I can't wait to make them, they sound so good. Of course you would recommend the muffins- I would expect nothing less :)
Roasted veggies are a favourite of mine, but I've never tried kabocha squash either. I guess I'm late to the party on that one, since everyone seems to be obsessed with it!
Have a good night love xo

There honestly is nothing better in the winter than roasted vegetables. They are just so filling and delicious. I could eat them every night for dinner if I had the veggies.

Looks like a great one-dish wonder!

Chelsea said... [reply]

Marry me! And make me this every night for dinner. ;)

bakingnbooks said... [reply]

I hope you ate that whole pan :)

I LOVE roasted vegetables...and lately butternut squash has been my life. I ate a whole one just on its own in one sitting...

I wish I was smart like you and just used healthy spices and seasonings - I constantly put spaghetti/tomato sauce on EVERYTHING with cheese...ugh, I need to stop but it's like an addiction...

Lola said... [reply]

Hey Kelsey! Thank you so much for your kind words, it means the world to me that someone actually likes my paintings hehe and you are effortlessly gorgeous too hun :)
Yummy dinner! I've never tried tofu any other way but scrambled and I wasn't crazy about it. Am I missing out? It seems really bland to me, I must be doing it wrong!

Your blog posts are always short, sweet, and to the point. In this case, it's a "I told you so!!" moment: YES! I'm glad you tried kabocha!! And loved it! :D

simplyshaka said... [reply]

Ohhhh I need to try this. I have tofu on hand and am looking to mix it up with how I make it!

Sara @ Nourish and Flourish said... [reply]

I need to get me some kabocha! Mmm mmm! So glad you enjoyed it. Oven roasted veggies are the BEST.

I've never tried roasting tofu, but it sounds good...did it dry out at all?

Josie said... [reply]

Roasted veggies are the best! I've tried tofu once and i was not a fan of the texture, I'm going to have to try the extra firm!

Thanks so much on the advice for the supplements! <3

Maryann said... [reply]

Love oven roasted veggies! This looks like my kind of dinner :)

lequan said... [reply]

Hubby hates tofu, but I actually like it. I think it just gets a bad rap cause of it's blandness. If done properly, it actually is really good and your meal is a perfect example.

Joanne said... [reply]

Lisa said... [reply]

That looks great! I love roasted veggies....although I'm still a little scared of adding tofu. I just am not crazy about the texture, but I think I need to experiment with it a little!

Stephanie said... [reply]

That's it, I'm adding kabocha squash to my grocery list. Your pics do a good job of selling it! I made roasted veggies today too, but mine were less exotic than yours: yam, turnip, onion, garlic, carrot.

sugarcoatedsisters.com said... [reply]

Yum this looks delicious! I've been wanting to experiment with tofu and will probably give this a shot sometime this week!
