My dinner last night was fabulous! Good enough to blog about IMO :)
I rarely eat Tofu, and when I do, it's usually when someone else makes it...
I cubed up some Extra Firm Tofu and mixed it with kabocha squash,
broccoli, asparagus, brussel sprouts, green beans, leeks, kale, and onion
Before baking, I made a quick marinade of mustard, balsamic vinegar, dill,
nutritional yeast, garlic powder, cayenne, and black pepper, which I poured on top...
Baked for 45-50 minutes @ 385F
After passing time watching Oprah until it was done,
my Oven Roasted Vegetables looked like this...
Now I understand why you guys told me, "Kelsey, you need to try baked kabocha squash!"

Well if that's not the most delicious looking thing I've ever seen, I don't know what is...
sometimes there is nothing better than roasted veg with a good marinade. and yours sounds like a winner!
oh if you like it roasted, try steamed kabocha. it's like friggin dessert! cut into chunks and steam for 15mins, then pop your bowl of steamed kabocha into the freezer for 10mins and then take it out and enjoy. the texture is out of this world! i rarely eat tofu either but i kinda want to now haha. thanks!
My kinda dinner right there!! And kabocha is my true squash love! I put leftover roasted kabocha in a smoothie once... my god... best smoothie EVER!

I'm just getting into tofu - roasting/baking it seems the nicest way to have it. You're veggies look fab - I've never had roasted broccoli before, I'm definitely going to give it a go.

Mmmmmmmmm, lots of things that I like on your baking tray! Roasted kabocha is heaven, of course, and I also love asparagus, onion, broccoli, and green beans. Have to try firm tofu, makes me curious.

I never thought of roasting tofu with veggies, awesome! I cannot cook tofu so this looks like something I couldn't mess up! Kabocha is still on my list of things to try for sure! I can never find it.

Roasted veggies are a favourite of mine, but I've never tried kabocha squash either. I guess I'm late to the party on that one, since everyone seems to be obsessed with it!

There honestly is nothing better in the winter than roasted vegetables. They are just so filling and delicious. I could eat them every night for dinner if I had the veggies.

I LOVE roasted vegetables...and lately butternut squash has been my life. I ate a whole one just on its own in one sitting...
I wish I was smart like you and just used healthy spices and seasonings - I constantly put spaghetti/tomato sauce on EVERYTHING with cheese...ugh, I need to stop but it's like an addiction...

Yummy dinner! I've never tried tofu any other way but scrambled and I wasn't crazy about it. Am I missing out? It seems really bland to me, I must be doing it wrong!

Hubby hates tofu, but I actually like it. I think it just gets a bad rap cause of it's blandness. If done properly, it actually is really good and your meal is a perfect example.

That looks great! I love roasted veggies....although I'm still a little scared of adding tofu. I just am not crazy about the texture, but I think I need to experiment with it a little!
That's it, I'm adding kabocha squash to my grocery list. Your pics do a good job of selling it! I made roasted veggies today too, but mine were less exotic than yours: yam, turnip, onion, garlic, carrot.
