Tofu Stuffed Sweet Potato


It just occurred to me how important dinner is for our mental health. Dinner 
is our chance to wind down from a busy week and relax in the warmth 
of our surroundings. For this reason, it only seems natural that we would 
enjoy comforting foods like baked sweet potatoes as our evening meal


Along with my baked sweet potato, I made a stir-fried stuffing
 with cubed tofu, spinach, onions, pasta sauce, salsa, nutritional yeast
garlic powder, basil, oregano, rosemary, chili flakes and black pepper


Because it was such a giant sweet potato, I had 
to Bake @ 400 Fahrenheit for 75-80 minutes!


Although many experts tell us to eat our carbohydrates earlier in 
the day, I know that starches in the evening boost serotonin 
levels in the brain, helping us feel calm, happy, and full :)


My tummy delightfully agrees!



Question: Do you eat carbohydrates in the evening, 
or do you prefer eating them earlier on in the day?

That looks awesome Kelsey! I never really think to stuff sweet potatoes like that, but what a great idea! I've been wanting to make twice baked sweet potatoes lately... myabe I'll do that soon!

I eat carbs anytime all the time:) My body doesn't care what time the clock says, I just like 'em! You're a genius making savory stuffed sweet potatoes!! I've had them with pineapple and marshmallow...SO GOOD! But tofu is a great idea:)

I don't worry about eating carbs at any particular time of day. All I know is that this meal looks delicious and really nutritious!

I prefer to eat carbs at night - I'm not sure why! I feel like they make me sleepy, and if I eat them at lunch, I feel weighed down!

I eat them any time of the day but I try to have most of my carbs before midday! I've just started eating homemade sweet potato fries with thyme, rosemary and oregano and I love them!

I have to eat carbs before I go to sleep, otherwise I am STARVING and can't sleep!

It really doesn't matter WHEN you eat them, all that is a myth.

That potato is so squishy looking!
I do eat them anytime, but I prefer to eat more carbs later in the day...probably for the reasons you stated, too. They just make me feel calm in the evenings, and satiated. I like feeling 'fuller' later in the day, too, rather than earlier on. I guess they're kind of a signal to my body of "Hey! Good news! Time to start winding down!"

Experts, smhexperts!! It doesn't matter when you eat carbs (unless you are trying to get down to a certain body fat %); it's still the same calories at the end of the day!! I eat carbs morning, noon, and night and it never stopped me from losing 70 lbs!! Dinner is my favorite meal, so they can pry my carbs from my cold dead hands.

That stuffed sweet potato looks awesome.

Great recipe! I love sweet potatoes, goes well with anything! I tend to eat carbs during the day and more veggies and lean protein at night! But if my body needs carbs, i'll eat carbs!!

How awesome for you to have found a way to get your nightly sweet pot fix with added protein and greens to keep the sugar levels cool and still get you seratonin fix...
Though I am certain I will see a leaning tower of roasted sweet potatos any day now..lol...it's just nice to switch it up.

I eat carbs all day long (mostly because veggies = carbs and i <3 veggies), but lately I've been finding it's much better to save my "heavier" (aka starchier or grainier) carbs until later in the day so I don't weight down my day or yoga practice. I love stuffing veggies, too; chickpeas-stuffed sweet potatoes are yummy :D!
