Catch and Release


The warmer weather means more fruit and more parfaits!


Superfood Pineapple Parfait with yogurt, 
green food powder, pineapple, and cinnamon


For lunch, I generally stick with wraps and a little protein...


3/4 cup cottage cheese on a bed of raw spinach, tomato, onion, and black pepper





Then I baked it in the oven for about 5 minutes


Long enough to gently wilt the greens and crisp the tortilla


After some sun worshiping a.k.a. tanning, I was badly craving fruit!


First, I sliced up some cantaloupe, plums, and an asian pear


Then I made this ugly but yummy looking Coconut Carob Sauce: 1/4 cup 
unsweetened coconut milk, 1 Tbsp roasted carob powder, and a dash of water


And poured it over the fruit...


It definitely tastes better than it looks people!


Dinner was a classic stir-fry with a twist...


I added edamame beans which are my new addiction :)


There's also 1 small cubed kabocha squash, corn kernels, 
broccoli, snap peas, celery, kale, swiss chard, zucchini, and onion


I believe the spices I used were paprika, cayenne, 
Italian blend, cumin, coriander, garlic, and rosemary


After dinner I noticed there was a guest who dropped by, uninvited


Hello Wasp!


After having witnessed years of brutal bug massacres from my
 Mom growing up, I am more apt to taking a gentler approach haha


"Don't worry, Kelsey won't kill you"


I took the wasp outside to fly free to sting some poor innocent person


*Shake shake shake*


*Shake Shake Shake* some more...


I didn't think saying goodbye would be this hard for Waspy :(


"You can't live in my glass jar forever!"


And with that, Waspy flew away... lol

I always try to save bugs like that, getting them outside. But sometimes they just don't want to leave :))

whoa...the wasp looks scary to me. I literally panick when I see bugs - especially spiders, bees, or wasps. It's so nice you don't just kill it. My mom says you should always just "let go" of bugs and never kill - that's just cruel.

Ah I hate wasps...but I also hate squashing bugs. I much prefer your approach :-)

OMG. Every meal looks amazing! I would never think to bake a wrap with cottage cheese in oven, but I'm sure I'd love it. Can't wait to try this!!!

Ooh I love cottage cheese wraps!! Such a good idea, I haven't had one in wayy too long! (lunch time!) I love how stubborn that little waspy was, you'd think he'd want to be freed from that little glass jar! :)
