Baked Sweet Potato with Mushroom Cauliflower Puree


As messy and strange as this dish looks, it was one of the tastiest


"Cheesy" Mushroom Cauliflower Puree: In a food processor, I blended 
together 1.5 Tbsp light cream cheese, 1.5 Tbsp lemon juice, 1 Tbsp nutritional 
yeast, 2 tsp dijon mustard, 1 clove garlic, 1 tsp dried dill and 1/4 tsp chili powder


Then added 3/4 cup cauliflower (chopped and 
cooked) and 2 large shiitake mushrooms (cooked)


Blend on high until pureed


Then I added my Mushroom Cauliflower Puree with 1/2 cup
cooked organic lean ground beef and 1/8 cup diced red onion


Mixed together


At the last minute, I tossed in 1 cup spinach (chopped and lightly cooked)


Added a pinch of black pepper before mixing together one last time 


In the meantime, I had 1 large Purple Sweet Potato  
baking in the oven for about 1 hour @ 400 Fahrenheit 


When the potato was done I stuffed it with the puree


Full of flavour and extremely comforting. The sweetness of the sweet 
potato really pairs well with the savory mushroom cauliflower puree

Great recipe, they have some of my favorite ingredients. I just ate a crap lunch now I am feeling guilty after this :-)

Yuuuuuummm mushrooms are my FAVOURITE. I have never had them with sweet potatoes though.
