Naturally, in order to make a Broccoli Salad, we need Broccoli
As most of you know, steaming vegetables is a great
way of ensuring they retain their nutrients when cooking
Traditionally you place the bamboo steamer in a large stir-fry wok containing a
small amount of water, like I did here. Otherwise, a large pot will work just as well!
After steaming for approx. 5 minutes over the boiling water
Tossed into a glass salad bowl
After cooling for a few minutes, I topped with chopped Red Onion
And squeezed the juice from 1/2 Lemon, to add some zing
Bradner Farms Organic Chicken Breast
To satisfy my craving for chicken, I grilled and
sliced 3oz Chicken Breast to go on top of the salad
With 1/3 cup cooked Edamame
Vegan Broccoli Salad from Planet Organic Market
Well, what was left after I ate all the broccoli from it:)
Ingredients: Organic Broccoli, Vegenaise (Canola Oil, Filtered Water, Apple Cider Vinegar, Brown Rice Syrup, Soy Protein Sea Salt, Lemon Juice, Mustard Flour), Organic Thompson Raisins, Organic Yellow Bell Pepper, Organic Red Onion, Organic Walnuts, Texturized Vegetable Protein "Bac'un Bits" (Soy Flour and Caramel Colour), Soybean Oil, Salt, Natural Flavours), Organic Agave Syrup, Organic Lemon Juice, Sea Salt
Added into our salad
To finish, I added a sprinkle of Cayenne Pepper and a dash of Apple Cider Vinegar
By de-constructing the ingredients in the pre-made Vegan Broccoli Salad,
this can easily be made at home. The main components: Texturized Veg
Protein (TVP), Raisins, Walnuts, Bell Peppers, Mayo and a little Sweetener
