Packing a Lunch for yourself makes you feel like a kid again. This
is my Veggie Bean and Cream Cheese Sandwich on Olive Bread,
wrapped in soy wax paper and personalized with a sticker label
I used this Black Olive Bread from Wildfire Bakery
Look at all those big, juicy black olives!
Between the slices I layered Refried Pinto Beans, Cream Cheese,
Pickles, Tomatoes, Red Onion, Brown Mustard and Black Pepper
The only thing I forgot was the Spinach Greens, which would've added more colour

Yum! Geez the purple onions look so good for some reason. I always pack my lunch, ever since the first grade :)

Hi Kelsey - I have recently found your blog and I think it's wonderful! I notice in some of your older posts you mention being gluten free. I also notice that the above bread is made with wheat flour. Are you able to eat wheat again? I am currently dealing with a gluten sensitivity and would love to know if this is something that can be 'reversed'. Thanks!

I pack my lunch 3-4x a week to take to campus with me. It's a pain in the butt, but at least it's better than buying unhealthy campus food all the time!
Delicious looking sandwich! I love olive bread, my church used to even use it for communion. I always pack my own lunch =)
