I rarely think about making salads in the winter
But do we really need an excuse, such as the weather, to
prevent us from enjoying such a healthy meal? Of course not!
In a large mixing bowl, I tossed together 1/2 a head of romaine lettuce
and 4-5 cups of spring mix salad greens with 1 medium diced tomato,
1/2 cup chickpeas, 1/2 diced avocado, and 1/8 cup diced red onion...
And 1 roasted and shredded chicken breast
I seasoned it with black pepper and made my
Simple Spring Salad Dressing to pour over top
Perfectly balanced meal
And a large enough portion to keep you full for hours

That looks so healthy and delicious. I need some like right now! I have salads a lot for lunch even in the winter. My favorite way to have leafy greens is with some quinoa or hummus on top.

I got my leafy greens lately by having them in a green monster smoothie and using kale in my chicken stock.

I like my salads simple - mixed greens (must include baby spinach and arugula), tomato, avocado, and some lemon herb dressing.

I've been needing to eat more summery foods to get out of the winter funk - this salad looks delicious! I've been eating a lot of raw veggies lately - they're just easier to transport around!
