Purple Potatoes and Peanut Butter Cookies


The first time I blogged about eating sweet potatoes and yams 
for breakfast I enjoyed them this way with nut butter and jam


But this time I enjoyed my leftover roasted purple potato covered with
 cinnamon and topped with a poached egg, sprinkled with cayenne pepper


Pre-baking the sweet potato the night before  
helps cut down on cooking time in the morning


In the morning I quickly pop it back in the oven at 
375 Fahrenheit for 5 minutes or so, just to warm it up


Mmm who doesn't love cookies!? Especially when they're made by Sunterra

Simple and classic, and pairs wonderfully with a hot cup of earl grey tea :)

I am a BIG fan of peanut butter cookies. I haven't had one in a loooong time though. I should make some soon.
