Nanaimo Bar Recipe


Nanaimo Bars
inspired by Maple Spice


And these Nanaimo Bars are Gluten Free and Vegan!


Base Ingredients

1.5 cups graham wafers
1 cup vegan chocolate chips
1 cup dried and shredded coconut 
1/2 cup vegan butter or margarine
1/2 cup chopped pecans


Kinnikinnick Gluten Free S'moreables Graham Style Crackers


Step A: Melt Chocolate Chips and butter over a pan of simmering water


Step B: Blend the pecans and graham wafers in a food processor


Step C: Once chocolate has melted, mix in the 
pecans, graham crumbs, and shredded coconut


Step D: Line an 8-9" pan with cling wrap and press the
 mixture firmly and evenly into the pan; Refrigerate until set


Filling Ingredients

3 cups icing sugar
1 cup vegan butter
3 Tbsp dairy-free milk
4 Tbsp custard powder


Bird's Custard Powder


Step E: Soften the butter, then beat in the custard 
powder. When smooth, beat in the icing sugar and milk
 alternately until you get a fairly thick frosting-like consistency


Step F: Pour and spread evenly over your chilled base and return to the fridge to set


Topping Ingredients

2 cups dark chocolate chips
1 Tbsp vegetable oil


Step G: Melt chocolate and oil over low-medium heat



Step H: Pour and spread carefully over pan, then return to fridge


Step I: Before chocolate topping hardens, score lines with a
 knife to make for easier cutting, then return to fridge to fully set


Yields approximately 15 dessert squares

I've actually never heard of Nanaimo bars before this post! They look so ooey, gooey, and delicious. Thanks for the recipe, girl! These would be great to bring to a party for a fun summer treat.

my great auntie makes infamous nanaimo bars.

I've never had nanaimo bars, but they sure look yummy! They cn't beat the rice krispies treats you posted the other day though.
Aww hun thanks for your post hehe, unfortunately the girl in the pic is not me :( but that's how I wanted my hair to look. I have much darker hair now, but I guess is better than green! And if you want to go blonde, slowly is the best wy to go, if you don't want to end up with orange hair!

p.s. making ghee does sound fun!!! I suggest looking for some ghee at an Indian store or maybe a healthfood store. But seriously though, I didn't know you could make your own ghee!

Mmmmm....those look like delicious treats! This reminds me I need to remember to pack the ingredients for smores for my July 4th gathering at the lakehouse!! Or maybe if I have enough time, I'll break out this recipe :)

The middle layer...you have ingredients i have never seen. Icing sugar im pretty sure is confectioners/powdered sugar. But the custard powder, need to find that!

Oh and just a tip for you to save $$...you can buy most any brand of choc chip at the store that's a semi sweet or a dark. Just not milk. And they were inherently be vegan. You dont need to spend the extra $ on the vegan ones unless you are truly wanting it certified, i.e. TJs choc chips are vegan, they just cant label them as such bc they are not certified.

AMAZING creation Kelsey! 3 layer desserts are a PITA (check my vegan creme de menth bars in my choc recipes link)...but worth it!
