Cottage Oatmeal Pancakes

Clearly most of you have a natural pancake making ability.

You may think this is an easy task...

Yet sometimes it take 21 years to make a pretty pancake...

I'm not kidding, this is actually the best i've ever made
pancakes. It's a work in progress but i'm getting there

I present to you my version of
Cottage Oatmeal Pancakes
The Base:
1/2 cup oats
1/3 cup cottage cheese
1/2 cup almond milk
1/2 teaspoon baking powder

The Topping:
1 tablespoon peanut butter
1 medium sliced banana

I stink at making pancakes look pretty - but I don't practice making them so that's my explanation ;-)

Oooh! I'm making a different pancake every weekend, I think I'll try this one this Saturday!

Those look AWESOME!! I love having fun deciding what ingredients to put into my pancakes but bananas and chocolate chips are definitely an all time favorite topping!

Last time I tried making pancakes with cottage cheese, the cheese melted and stuck to the pan :(

Tanya's Daily Product Reveiws said... [reply]

Haven't tried it with cc,looks good though!

Yummmmmmy!!! Your "work in progress" looks perfect to me... but then again, maybe I am biased because of your choice of toppings.

For how can something be bad if it includes chocolate?

:) :) :)

Love,
Katie

I've actually never made pancakes before. It looks pretty easy when you use just the regular mix...not sure about cottage cheese, that'd be harder for me haha! I actually just cooked scrambled eggs for the first time ever the other day. I know how to cook...but only just cook my favorite meals and they are pretty simple.

As for the hills...I think I'll just come visit you on hill workout days and we can do them together haha. Might be a tad expensive but I get to see you and that's worth it, right?

YAY I need another way to make pancakes aside from the ONE way I made them...that one time, haha. They sound interesting with the cottage cheese.

secondcityrandomness said... [reply]

Oh that looks awesome. I'm really bummed I just had to throw out some nasty looking cottage cheese from the back of the refrigerator- otherwise I'd be ON IT!

nourish-and-flourish.net said... [reply]

Mmm. The pancakes look fantastic! Whenever I make them with oats, they turn into a big, sloppy mess! haha. I'm guessing that cottage cheese holds them together better than eggs. :-)

Have you tried coconut flour pancakes? They're my favorite!

YOur pancakes look great and I m sure they taste really really good!

I love pancakes. We're having some for dinner Friday and I have been looking forward to it all week! Yours look gorgeous. Love the topping choices.

I love pancakes but haven't had them in a long time! It is too much effort to find gluten-free ones that don't have soy too. These look great! Thanks Kelsey for the great idea. I am going to give these a try!

What a healthy, protein filled breakfast pancake, and those chocolate chips and bananas add the perfect touch!

I love to use cottage cheese in pancakes. It's just not something I keep in my fridge at all times....

I think your 'cakes look awesome! Can I have a bite?

blueeyedheart said... [reply]

I'm awful at flipping pancakes, too... mostly because I get way too impatient to wait until it's actually TIME to flip them! ;)

I've never tried making a pancake with cottage cheese, but now I want to! :)

lizlivingvegan said... [reply]

Those are adorable pancakes! :) I'd say its worth the practice ;)

thehungryscholar said... [reply]

Those look easy enough! I tried to make oatmeal pancakes once and they were BAD. I'll have to try this.

Kristy Sayer said... [reply]

I think I'll have to wait another three years to get good at pancakes then :P
But that said, I never practice because I'm not a pancake fan.
So I may just have to stick to baked goods.

Your pancakes look yum though! They could convert me :P

Laury Ann said... [reply]

These look AMAZING! I love your pancake posts! I never eat them, I need to make a batch soon with some protein!!!!

These look delicious! It looks like the cottage cheese makes them super fluffy!

abcsandgardenpeas said... [reply]

Holy comments!

I've been craving pancakes lately. I think it's high time I make some!

I'm really wishing I could find the coconut milk kefir somewhere, because I think it would make a great pancake batter ingredient. I wonder what could replace that cottage cheese,,.

I never made good pancakes until I got an electric skillet. Now, they always come out great!

seekmyself said... [reply]

I think you've just managed to convince me that I need to practice my own pancake making skills. It's been too long since I've had them, and I fear I may have gotten rusty. I'm not sure if I could let go of my favorite oatmeal breakfast, but a pancake lunch sounds like a super idea :) And a chocolate/banana/nut butter topping? Bliss.

the actor's diet said... [reply]

i love the idea of putting cottage cheese in pancakes - i sometimes use it at topping

Jess - Healthy Exposures said... [reply]

What a great recipe!! They look delicious. And no worries - I can't make a pretty pancake to save my soul, either. I assume it's because I'm more apt to use WW flour rather than AP, but that's also a good excuse for me just being a bad pancake flipper :P

highonhealthy said... [reply]

I'm horrible at making pancakes too. Like, I can make them taste good but they usually look like poor hobo pancakes. I just don't understand how people can make them so perfectly round and golden! It's definitely a talent that I wasn't born with.

Jessie @ The Happiness in Health said... [reply]

Nice job with the pancakes! They look delicious and full of good-for-you ingredients. I imagine they would keep me full for a long time :) I agree about the difficulty of making pancakes - it's hard! Yours look very pretty :)

simplyshaka said... [reply]

Holy yum-those look amazing! My pancakes always come out jacked b/c I dont have a griddle. I was toying with the idea of buying one but now don't have enough space in my kitchen so sigh, no griddle for me and I have to either make a large one or a few mini pancakes on the stove top, sigh.

I'm looking forward to my birthday black bean brownies in the morning!

patrickandjessica said... [reply]

Mmmm, those pancakes look amazing! Way better than any pancakes I've ever made... I might have to try those myself!

aletheia said... [reply]

I'm pretty sure all my failed breads in life got turned into pancakes. At which point they continued to be failures, of course, but naturally I just blamed that on the fact that pancake-making and I just don't jive. Ha. No seriously, I used to love making pancakes. But then I got too lazy to pour them all out individually into loonie shapes, so instead I turned all my pancakes into one big bread. I'm smart and efficient like that. ARHARHAR.

Cottage cheese in pancakes--actually I tried that once but...I just couldn't get over the huge chunks of cheese... So I stuck to ricotta. :-) Lemon ricotta pancakes are BOMB!

Oooh, I have cottage cheese in the fridge right now (I rarely do) and have been trying to think of a way to use it apart from just, y'know, plain. Thanks Kelsey!

runsarah said... [reply]

Those look awesome - I am the worst pancake maker ever, mine are always a huge mess, yet still tasty ;)

jqlee said... [reply]

haha i love making pancakes but it takes work. they're mostly a weekend thing. you did great girl!!

greensandjeans said... [reply]

It has taken me far too long to figure out the whole pancake thing and now I can't stop making them!

Lauren said... [reply]

Wow...those do look amazing!! Does the cottage cheese mix completely in, or do you taste it in the pancake?

Congrats on your first pretty pancake!! ;)

tatiannalives said... [reply]

Wow! Those look so good! I am jealous :P I don't really do raw bananas though (they hurt my throat!), and I don't think I could last a morning without a bowl of oatmeal these days.

No shame - pancake making and flipping can be a challenge and a half! Congrats on making a batch that worked out :)

haha its never to old to start learning how to make pancakes :)
I love adding cottage cheese to pancakes for extra staying power.
Fiber 1 actually makes a pretty good mix if your pinched for time!

Danielle said... [reply]

Ohhh this looks good! Maybe I could sub. the cottage cheese for silken tofu? Orrr coconut milk? haha darn vegan making everything complicated ;)

lighterportions.com said... [reply]

Homemade pancakes are amazing. Mine are never perfect but there are so many great recipes out there that I try a different one pretty much every time. I've definitely done the cottage cheese/oat thing before but not for quite a while. I need to again clearly, yours look AMAZING!
