Superfood Study Break

Superfood Banana Date Yogurt Parfait

Mixed 1 Tbsp Greens+ Smoothie Powder with 1 cup Plain Yogurt atop 1/2 
cup Shredded Wheat topped with 1 ripe Banana and 3 large Medjool Dates

After Breakfast, I hit the books. This week has been insane, scrambling to 
retain over 200 pages of Physiology, Anatomy, Sports Science and Fitness
 Material in less than 1 week! But I know all the stress will payoff in the end

Pinto Bean and Salmon Salad for Lunch

... with a Light Cream Cheese Dressing

1 can Raincoast Trading Wild Salmon, 1/2 cup Eden Pinto Beans, 3-4 cups 
Spring Mix Lettuce Greens, 1/3 cup Alfalfa Sprouts and 1 Tbsp Green Capers

The Dressing: 2 Tbsp Light Cream Cheese, 2 Tbsp Lemon Juice, 
1 Tbsp Red Wine Vinegar, 2 tsp Dijon Mustard, 2 tsp Nutritional 
Yeast, 1/2 tsp Cayenne Pepper and a pinch Black Pepper

Then back to studying before (flash forward) to Dinner...

HUGE Sweet Potato! Baked @ 405 Fahrenheit for 80-90 minutes

Stuffed with Tofu and Vegetables :)

Firm Tofu mixed with Tomato, Broccoli, Green Beans, Kale, Onions and Salsa

Not as pretty looking as my last Tofu Stuffed Sweet Potato

I'm pretty sure I have the same dish, but the lid is missing. I inherited it from my great-grandma. Too funny how some things are EVERYWHERE!

And that salad looks amazing. Now I'm craving salmon!

Funny, I just discovered one of those vintage baking dishes in the cabinet a few days ago - and immediately proceeded to bake my oatmeal in it, of course!

Oh my gosh, that dish looks like some we have! Or had... I think my mom has them in a pile to get rid of. I should tell her- maybe we could sell them for a fortune. Then I could buy truckloads of gluten-free oats!

My grandmother has these dishes - and I adore them! They always seem to be the perfect size! I love good glassware for baking - I'm always needing more!

The sweet potato looks amazing - I've been craving one all week - I like to put baked beans and coleslaw on mine, or even just salsa!
