Meals and Marathons

I saw the new "Authentic Recycled Glasses" from Pier 1 and knew
needed to buy a couple; They are perfect for my Fruit and Yogurt Parfaits

Sliced Cantaloupe, Strawberries, Prunes, and Pineapple

Layered between Organic Plain Yogurt and Cinnamon

Lunch was a little fishy...

I dressed the Salmon with a spoonful of Lite Canola Mayonnaise

Mixed with Spinach, Red Onion, and Black Pepper

And folded into a wrap...

I think Salad Wraps are my new favorite Lunch option... whether
it's Salmon Salad, Chicken, Tofu, Tempeh, Egg, Bean and Cheese etc.

The downfall is that Ezekiel Tortillas don't hold
their form very well and are always breaking apart

Congratulations to those who ran the BMO Vancouver
Marathon and Times Colonist 10km this morning!

Happy May 1st Everyone

Sorry to hear that you are having a health issue... I hope everything is now ok!

I just found some lovely gluten free wraps in my little city, so I am going to get some! I may copy you and make a yummy salmon salad wrap!

I'd love to get my hands on bone-free canned salmon! I always have to pick the bones out. :(

Your wrap looks delicious! I agree with you about the Ezekial wraps -- they tend to fall apart in my hands!

That fruit plate looks gorgeous!

I've been having a recent love affair with red onion myself - having always hated raw onion as a child, this is a strange development indeed!

I always try to spritz my wraps with a bit of water and nuke them for 15 seconds - it usually makes them a bit more pliable.
