Pineapple Coconut Oatmeal


Pineapple Coconut Oatmeal with Unsweetened Carob Chips


A somewhat tropical breakfast


With some egg whites and cinnamon stirred in


The combination of oats, pineapple, coconut, and carob is quite yummy


Now, for a little Taco Time...


Chicken Taco with Refried Pinto Beans and Cream Cheese


Amongst lettuce and sliced tomato with pepper


Sitting atop an Ezekiel Tortilla


I started pre-cooking a few chicken breasts ahead of time to keep in 
the fridge, which makes it so much easier to quickly put together a meal


By dinner, I was craving kabocha squash


So I made a big portion of Oven Roasted Vegetables and Squash


With Broccoli, Swiss Chard, Spinach, and Red Onion


Some people were curious about portion sizes; I generally 
use a medium-size kabocha squash (approximately 2-3 lbs)


Question: Any special plans for Mother's Day on Sunday?

mmm pineapple coconut oatmeal sounds divine! I want to try that for sure. The wrap is also looking delicious, I'm making a turkey tonight and i can easily imagine the leftovers folded up in one of those babies! Yum!

funny~I was going to eat this very oatmeal combo this morning but then changed my mind! :) growing up, I never got to celebrate special days b/c my fam was always so so busy. However, now that I'm a young adult, I try to break that 'tradition' and do something for my parents once in a while! so this weekend, we're having a PARRILLADA with Argentinean bbq and all that good stuff. :) have a beautiful week~

Your breakfast looks super tropical! I lovee pineapple but recently found I'm newly allergic to it (it's odd, I know! usually you grow out of allergies not into them :P)

This year for mother's day I'm baking my mum a batch of her favourite cookies and giving her the quote/photo book I made for her! oh and making sure she doesn't do ANY work :P

Mmm..as if the combination of pineapple and coconut couldn't get any more delicious, you went and added carob. Oh my. I think I know what I'm having for breakfast tomorrow. :D

I wish I could be with my mom on Mother's Day :\ I'm always up at college for it, but I'll make up for it when we are reunited again :)

I never would've thought pineapple and chocolate. I bet it's good though :) And your kabocha craving... m'mmm you made something quite delicious looking!!

Carob and coconut are BFFs. It is known. Cherries might be really good with it too, in place of the pineapple.

My mommy and I are separated by the Atlantic Ocean. But I sent her a card!

oh don't get me started on kabocha. that stuff is good.
Sadly, my lips itch when I eat pineapple but that breakfast bowl looks tasty! I actually made my mom simple oatmeal for mother's day in bed. She loves oats like I do:)
