Yam and Walnut Salad


I love subbing regular white potatoes for yams (ie. sweet potatoes) as a base for salads


Yam & Walnut Salads are perfect to pack for picnics 
and scooping into little containers for a midday snack


Yam & Walnut Salad

2 medium sweet potatoes 
3/4 cup chopped red onion
1/2 cup walnuts
1/2 cup raisins
2 Tbsp honey (or syrup
1 tsp ground cinnamon 
1/8 tsp cardamom (optional)
1/8 tsp nutmeg (optional)
1 pinch cayenne or chili powder


Step One: cut sweet potatoes/ yams into cubes


Step Two: combine honey, vinegar and spices together


Step Three: pour mixture onto sweet potatoes and massage with hands


Step Four: place on baking sheet and bake for 
30 minutes in pre-heated oven @ 375 Fahrenheit


Step Five: chop red onion (or white/yellow/green onion)


Step Six: after 30 minutes, remove from oven and sprinkle on chopped onion


Step Seven: place back in the oven and continue cooking for 30 more minutes


Step Eight: remove from oven and let cool for 10 minutes


Step Nine: place back in bowl and add walnuts and raisins 


Step Ten: toss everything together and serve


Makes 4-5 servings

I love the combo of the vinegar and honey and all the great seasonings and I'm sure the walnuts add a nice crunch, yum!

I really don't know why I haven't tried a big bowl of yams and walnuts before. It sounds so very good! And I love the combination of flavors you have going here. So good! I cant believe how similarly we eat! Same basic raw stuff chucked together. Nothing but the best. Sweet potatoes and potatoes forever!! :)
