My Lunch was made with Love today
I took a Brown Rice Tortilla and baked it to form a Taco Bowl
Then re-heated leftover Roasted Kabocha Squash
and Vegetables scrambled with 1/2 cup egg whites
And topped with a sliced of L’AncĂȘtre Organic Mozzarella Cheese
All served in my Inspiration Plate
I could definitely taste the "love" in this dish
Although as I am typing this, clouds have rolled in to cover the sunshine...
But today and yesterday has looked like this. The past week we've had RAIN
Canada (along with most of the United States) have been experiencing heat waves
But we need the sun, so i'm going to be selfish
and hold it in the sky for myself a little longer :)

Your meals always make my mouth water and inspire me to try new food combinations. I love the idea of combining squash with egg whites and mozzarella...in a taco bowl! Mmm.
I hope you're able to hold on to the sunshine through the weekend! xoxo
what a interesting combo! ugh these heat waves are killing me! I wish there was more sun, but its just been cloud and humidity....
Love that last photo! <3
beautiful lunch and beautiful pictures of you pinching the sun! love that, and hope it stays sunny =)
That looks like cheesy deliciousness right thereeee!
Hey, at least you got the sun out your way - we've been cloudy all day and it's freakin' cold!
Yum! What a great combination - I never would have thought to top my squash with mozzarella, and it sounds fantastic.
Have a good weekend, Kelsey. Hope you are doing well. xoxo
I would've never thought to put squash with mozzarella. Looks great!
Oh Kelsey, I love love love cheese and squash together. I havent had it since winter but this post made me want it right down to my core! Dangit!
hi Kelsey, thanks a bunch for visiting me! you have a great space here, love the d-vine recipes total. nice that we are only a waterway apart form each other. i get over to Victoria a couple times a year and it's never often enough in my books. such a fab place!
isn't our weather system bugging out? i like your idea of sun captures though, way to keep it unique!!! happy weekend. ♥
I will gladly send sun and warmth to BC if you send some rain to Ontario. We need it badly!
Hey, i couldn't reach you any other way so...CONGRATS! I'm giving you the amazing blogger award! :)

Yummy meal!!!
And beautiful sunshine!! It's raining where I live, but it's such a nice break from the heat wave that we've been having. I feel like returning to my childhood, throwing on my bathing suit and running around the house. I'm just not sure how the neighbors would feel about this...haha! ;)
Oh wow, that is my kind of meal! I hope you enjoyed the sunshine!
your lunch looks lovely! Food prepared with love is so much better (:
Enjoy the weather!
I stumbled to your blog, and am loving it! I live in Chilliwack, so the fact that we have sun today is a BIG happy point in my life. We need to mix some of the Ontario heat wave with our rain wave, it might just even out.
Very unique tacos! I love the combination of flavors :)
Nice sun photos.
We had MAJOR heat waves for two weeks, but it seems like things are going back to normal now.
Those sun pictures are so cute! Must have hurt your eyes to take them though!
Oh wow that looks good!!!
I love the picture of you holding the sun! I've had lots of sun so far this summer and am so happy for it. I hope your clouds roll right back away and the sun comes back :)
Awesome photography!! I especially like the pictures of you holding the sun. You must be a strong lady. :P
So glad you stopped by the dish Kelsey. I always love following the trail back to a new and amazing blog like yours here.
Delicious dish and I love the creative photography of the sun.
We see a lot of people do similar things with the giant EPCOT ball, make it look like they're holding it up. :)
Welcome back any time. I'll be hanging around here for sure.
I heard you guys were getting cool temps :( It's blazing here...
Thanks your for comment - option B hey?? But wait - what kind of mood are you in?! Hope your okay :(
that looks glorious! not only the food but your photography is just stellar..so crisp, clear, vibrant...gorg!! :)
Thanks for holding the sun up today! It was very useful for my beach day ;)
Hehe! I like the sun-holding picture:)
You are hilarious holding up that sun! Loving this healthy squash taco :)
Hahha I know what you mean about the strange lack of sunshine - I've been working on a farm in the Okanagan for about two months now and it's been overwhelmingly dark and rainy!
That taco looks so goooood. I bought brown rice tortillas for the first time yesterday (after seeing all your creations) and I'm so looking forward to trying some delicious wrap combinations.
mmm that looks fabulous! I love putting my tortillas under the broiler and creating a much healthier taco bowl. And the melted cheese is the perfect topper.
Yum! I love creating fun dishes like this. This sounds wonderful. I have never actually made a "taco bowl" before. But I'm into it!
