Mozzarella Squash Taco Bowl


My Lunch was made with Love today


I took a Brown Rice Tortilla and baked it to form a Taco Bowl 


Then re-heated leftover Roasted Kabocha Squash 
and Vegetables scrambled with 1/2 cup egg whites


And topped with a sliced of L’AncĂȘtre Organic Mozzarella Cheese


All served in my Inspiration Plate


I could definitely taste the "love" in this dish


Although as I am typing this, clouds have rolled in to cover the sunshine...


But today and yesterday has looked like this. The past week we've had RAIN 
and CLOUD and UGLYNESS! All while many people in the Prairies and Eastern 
Canada (along with most of the United States) have been experiencing heat waves


But we need the sun, so i'm going to be selfish 
and hold it in the sky for myself a little longer :)

Your meals always make my mouth water and inspire me to try new food combinations. I love the idea of combining squash with egg whites and mozzarella...in a taco bowl! Mmm.

Yum! What a great combination - I never would have thought to top my squash with mozzarella, and it sounds fantastic.

Yummy meal!!!

And beautiful sunshine!! It's raining where I live, but it's such a nice break from the heat wave that we've been having. I feel like returning to my childhood, throwing on my bathing suit and running around the house. I'm just not sure how the neighbors would feel about this...haha! ;)

I stumbled to your blog, and am loving it! I live in Chilliwack, so the fact that we have sun today is a BIG happy point in my life. We need to mix some of the Ontario heat wave with our rain wave, it might just even out.

We had MAJOR heat waves for two weeks, but it seems like things are going back to normal now.

Hahha I know what you mean about the strange lack of sunshine - I've been working on a farm in the Okanagan for about two months now and it's been overwhelmingly dark and rainy!

That taco looks so goooood. I bought brown rice tortillas for the first time yesterday (after seeing all your creations) and I'm so looking forward to trying some delicious wrap combinations.
