Herb Roasted Chicken, Potatoes and Vegetables


We are long overdo for a recipe post, so here is a healthy chicken 
dish you can make for your family, loved ones or just for yourself


Herb Roasted Chicken, Potatoes and Vegetables

2 large chicken breasts 
(with bone and skin)
4 medium potatoes 
1 bunch fresh asparagus
1/4 medium white onion
3-4 cloves garlic
1-2 Tbsp olive oil
1/8 tsp chili powder
1/8 tsp cayenne pepper
1/8 tsp ground sage
Dash salt and pepper


Directions:
A. Preheat oven to 375 Fahrenheit
B. Lightly coat baking pan in oil and set aside
C. Wash and dice potatoes, then toss onto the pan
D. Top with sliced onion and fresh asparagus spears
E. Season potatoes and vegetables with salt and pepper
F. Massage chicken breasts with spices and a little extra oil
G. Place chicken on one side of the pan and tuck garlic cloves around them
H. Finish with a few last drops of oil over the potatoes
 and vegetables, using your hands to gently coat them
I. Bake for 40-45 minutes until chicken is fully cooked


You can leave the skin on or remove it before eating. Cooking the chicken breast 
with the bone in and skin on helps add flavor and keeps the meat moist and juicy


Tip: This dish could use an acid to help enhance the taste. A 
splash of vinegar or squeeze of lemon would be a great addition
