Pizzert Pancake



I was really excited this morning to try out Chocolate Covered Katie's 
Breakfast Pizzert! The only sad thing is mine didn't turn out so well :(


A few things went wrong; the pan was too big and the consistency 
was more like a fruity chocolate pancake. But it still tasted delicious 
and I wasen't about to start all over. So I enjoyed every bit of it!

What I used in addition to the recipe found here ...


Eden Organic Apple Sauce


Wheat-free Flour Blend: Whole Spelt, Kamut, Quinoa, Millet, and Rye


Dark Chocolate Chips


Mixed it all together with Raspberries, Blueberries, Cinnamon, and Stevia


And poured my Pancake Pizzert in the pan


Warm and melty chocolate chips!!!


Next time I will either double the recipe or use a smaller pan. But I totally
get why many bloggers are raving abou the 'Pizza/Dessert'...it truly is 
THAT fantastic. There's no rules, add whatever you'd like, anything goes



Can you guess what I used this thingy for?
Yup it's a potato masher, but I wasn't mashing potatoes!!


I made a chicken and vegetable mash. It's basically 
a Broccoli and Kale Stir-Fry but mashed together


With Cannellini Beans and Red Onion


And some Mustard, before stirring everything together 


YUMMY YUMMY in my tummy


Grabbed a freckled Banana for a quick mid-day snackie


For the 3rd day in a row I made Sweet 
Potatoes for Dinner, so what! sue me! ;)

BTW it just got really windy here, and the weather peeps posted a wind 
warning. I'm praying the power doesn't go out again!!! You realize
 real quickly how addicting the internet is when you can't have it.
Hard to believe I actually survived as a kid growing up before internet came along;
how did I manage? We actually communicated with humans face to face? lol

i must make one of those pizzerts, they look so cool and good, and easy to make! love your toppings sounds and looks so yummi!
ahh life sans the internet/computer, i think i could live, but it would be quite a challenge, i am def addicted to my laptop lol... but for the past couple of weeks since i have started to blog less, i have been going out more, and watching tv or reading or doing art instead, sometimes it is a nice break.

If there was no internet then I would be outside probably a lot more and may not have a job...eeeee!

Oh gosh... my life would be full of a lot less delicious food if the Internet didn't exist ;) Where else would I find the kind of mouthwatering creations that you only find on food blogs?

It's really hard to imagine a life without the 'net though. We don't really notice how much we rely on it until we lose it. I was Internet-less for a week and I thought I'd go mad. I felt so disconnected from everything.

Well the program that I am training with wants me to do a run/walk day and a straight running day...so tomorrow I run 1 to 1.5 miles...hopefully it works. Running is tough in the beginning

Wow, great question! On the one hand, I actually think I'd be quite a bit less stressed out!!! On the other hand, I wouldn't be nearly as connected to so many wonderful people, which would be a huge shame.

I'm sorry your pizzert didn't turn out so well - but it looks fabulous and delicious!

I don't know what I'd do without the internet - maybe relax more and read more? Face to face communication? What's that?? :P

How much fun is looking through another Victorian's blog? I love seeing the parliament buildings, familiar food, familiar moksha! So good!

Deeelicious meals- I love how many fresh fruits and veggies you incorporated!! I'm also such a fan of that pizzert- the warm and gooey chocolate chips really made my mouth water!

I can't even imagine where I'd be without the internet. I feel like it's my job! Ha! I suppose it wouldn't be all bad though- I suppose it would give other parts of my life more energy!

oh god. I wouldnt know half the things i know, i would be in the library, i would be outside more, i would have a more active real life with others but wouldnt necessarily be more fulfilled...b/c on the internet, i am fulfilled b/c i go look at things i want to look at...

I love the look of your pizzert! I've heard a lot about them, but never made any myself. Katie's recipes always look so good too. You've inspired me- I need to break out of my overnight oat rut anyway so I'll try to make pizzert soon.

Without the internet...wow I don't even know what I would do. Since I got into blogging I've been using it so much more than I ever did. I never spent much time on the computer but now it feels like hours a day! But its all worth it. I love all the knew people I've met (even if we don't get to speak face to face lol)

Love your pizzert, Kelsey! :) I'm sorry it didn't work out perfectly, but I'm glad it was good and I bet the next one will be even better. :)

Also, I love the idea of having sweet potatoes for dinner. I had them just the other night actually! Have you ever tried them with peanut butter? Sooo good.

I think about that concept sometimes, but more on a short-term basis. I would spend more time reading, cooking, hanging out with friends and family, and exercising. It felt good to go on vacation last week; I used the internet only every other day or so, for ten minutes to email. A welcome and healthy break...

I don't care what you say about it not coming out right -- that pizzert looks amazing!!! So colorful too :)

I think about how dependent I am on the internet too. I'm literally on it all day long (though maybe don't always HAVE to be for my job). If I somehow suddenly lost it, I would probably feel a little initial anxiety (as bad as that sounds), but then I think I'd adjust to it pretty quick. The times I've made myself unplug and step away, I've realized it isn't so bad. And it frees up a lot more time to do other things (read...actually talk to humans...etc)

Everything in here is so creative and yummy looking - LOVE. IT!
The chickpea veggie mash especially. Yum! And sweet potatoes are never a bad idea - you won't be getting any flack from me ;)
And I agree - you don't realize how much you love power until it's gone! haha. The worst thing about it is not just internet, it's EVERYTHING - so there's pretty much no source of entertainment. I mean, I wouldn't even be able to bake, and that's one of my favorite time-killers right there!

Gosh, I can't imagine life without Internet! I probably wouldn't be with my boyfriend of 7 years (as shy high schoolers, we started talking on AIM), food wouldn't be as exciting (most of my recipes are from online!), and would have A LOT of free time.

never heard of a pizzert thing until reading but i do not at all follow along with thw food bloggie world haha....i think your purposefully making sweet potatoes EVERY night to make me drool because i cant find good ones!

Your pizzert looks awesome! Like my Mom always says...it doesn't matter how pretty the food is on the plate, it all goes to the same place! HA!

The world with no internet.....I think it would either be the same as it was pre internet days or else some other form of communication would've been dreamt up.

If the internet didn't exist then I would get A LOT more stuff done. My life would be a whole lot more productive.. haha. I wonder what would happen if EVERYONE was forced to stay away from the internet for a week. That would be cool to see.. although it would probably wreak major havoc.

That breakfast certainly sounds delicious! Haha, I actually use my potato masher whenever I make oatmeal to smoosh a banana in the oats while cooking. Gotta love the those untensils! ;)

Thanks so much for the advice on my scar tissue! I'm actually going to try out your idea. I was wondering if you could give me the specifics on how much epsom salt, water, and flax seed oil you used, as well has how long you soaked them for? Did you massage the area as well? How long did it take before you noticed results? Thank you again SO much!
