Yup, I finally "Mastered the Muffin"
Oil-free, low in sugar and 100% Snacking Squirrel created
Nutritionally, they're around 250-300 calories per jumbo sized muffin
Blueberry Banana Oat Muffins
created by Snacking Squirrel
2 cups whole wheat pastry flour
1 cup rolled oats
1/2 cup brown sugar
2 large eggs
3 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon sea salt
1/2 teaspoon cinnamon
1/3 cup apple sauce
1/4 cup buttermilk
3 medium ripe banana
1 cup blueberries
Directions:
A. Preheat oven to 400F
B. In a bowl, beat eggs vigorously before mashing in your bananas. Then stir in the brown sugar until the lumps disappear. Add the applesauce and buttermilk before setting the bowl aside
C. In a larger bowl, add in the rest of your ingredients (all the dry) except for the blueberries which we'll add at the end. Stir the dry ingredients until evenly mixed
D. Pour the wet batter into the dry batter and lightly fold together. Do not over stir- common mistake! Over mixing de-fluffs the muffs! ... usually 12-15 stirs with the spatula is good enough
E. Just before you're done, add in the blueberries. Scoop into muffin pan. Top with oats
F. Bake @ 380F for 20-25 minutes
A few of you asked if I create my own recipes and the answer is YES!
Unless I specify that it's been adapted, it's 100% my own, baked with love :)

YUMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMM
These look sooo good, definitely worth all that late night muffin baking.
It's so awesome that you make your own recipes - I'm definitely more of an adapter than a creator, but I have come up with things on a whim :)
mmmm those look good muffin master!
holy yum! And I LOVE that you topped them with oats!
Beautiful! You know your muffin tops always get me! So yummy!

ooHh!! Glorious looking muffins! They look like nommilicious fuel to kickstart the day! xoxo
Those look so good! I'm bookmarking this recipe :D I made some granola and thought of you. The smell reminded me of you for some reason. I also mentioned your muffins in conversation yesterday when me and some other friends were talking about bakery goods. It made me a little said I admit because I wish that you lived.. like right down the street from me.
XOXO hope you had a wonderful Sunday
oh, yum! jumbo muffins are my weakness :P and now i've found ones that are healthy!
they look delicious- you're surely a very talented muffin baker :)
Haha @ "de-fluffs the muffs" :)
Those muffins are INTENSE!
So there is such things as a pretty muffin top :)
Congrats on muffin victory!

Kelsey I finally just read your last post -- that cartoon is hilarious!!!
And your muffins look great, as usual.
yummy! they look amazing and i like how some of the tops melted together. it looks like they are kissing :)
YUUUM!! I wanted to make strawberry banana muffins tomorrow and I have a feeling I will be adapting this recipe!
There is something about a blueberry muffin that is so home-y.
These look really great and I can't wait to make them :)
I wish I had your knack for making up recipes! I wouldn't even know where to begin!
Also how do you store these muffins? Once I made muffins with fresh blueberries, and they went bad in just a few days! :(
Amazingly delicious looking muffins. I am definitely going to make these tomorrow. Is this recipe for a dozen?
You go girl. Those look fantastic. Um - bakery in the future???
OMG, fantastic!! i so wiiish my screen was like the one in willy wonka and just reach out my hand and grab some!!!
Those muffins are exploding with flavor and nutrition! They look so very good. And I love the addition of buttermilk...I think it makes muffins taste so much better. Great recipe and photographs, my dear!
These guys look fab! ;)
Amazing!!! Nice work :)
I've been looking for a really healthy, lower fat muffin to make my mama for breakfast on days where she has to work - and this is PERFECT!!! Thank you, thank you! She will take one look at that beautiful creation and dive in.. I just know it! Haha
<3 Tat
Yumm...you should totally do a giveaway with those muffins. Or even just do a muffin jar "with the content" and directions. Drooling.
These look better than any high fat, high sugar muffin I've seen anywhere!! And...healthier?! I love it of course. Now all I have to do is invent some wheat-free pastry flour ;)
Those look beautiful. I know I haven't tried them yet to see how delicious they are, but I think you should launch your own muffin-selling business. (Online to your readers as a trial, perhaps?) :)
Oh if only there was a way I could purchase one through my computer... Your muffins always make my mouth water. (o:
very nice muffins kelsey! when are you opening a bakery!?
I am seriously impressed with people who can bake on a whim and put together their own recipes. I can make substitutions all the live long day, but I still need the bones of another recipe there to support me! You're amazing!
Kelsey, I agree with Christina! Have you ever considered opening a muffin bakery? Seriously, girl, you'd be a muffin millionaire! :-D
Love this recipe...Banana muffins are my very favorite (and the addition of blueberries surely makes them even better!). Do you think I could substitute a GF all-purpose baking mix for the pastry flour?
xoxoxo
Those look delicious! I'm impressed you can come up with baking recipes... i invent my own recipes too but its mostly just throwing stuff together and calling it cooking! :)
Those muffins look amazing. I especially love that they have blueberries, AND bananas.
oh my goodness kelsey, you've done it again! you must stop being so amazing. :) do you think there's any sub for the buttermilk? maybe soymilk + vinegar?
Nice job! Yay for pretty muffins! I really think you might turn into a muffin...but there are worse things to be...
I'm thinking of starting to bake mini muffins for my son. He's getting to the age where he can eat pieces of soft muffin, and I'm totally excited about it!!
Um... Can I be a snacking squirrel?
Those looks super amazing... and I would really REALLY like one right about now. Delish! I must make these... very soon. :)
wohooo- have to make these!! blueberriy muffies are my fave! they look absolutely fab and so cool you´re coming up with your own recipes! I do the same, but most of my baking attempts are so not blog worthy.... *lol*
enjoy your monday!!
xoxo Mel
I love this recipe! Blueberries are one of my favourite muffin additions....
These are gorgeous!!! Oh my goodness, they look just like a store bought muffin! Way to go!!
I wish i could eat wheat flour....everything turns our fluffier with wheat ;)
xxoo
You and your muffins get me every time! I'm very impressed that you come up with your own recipes :)
Okay, I have absolutely no time on my hands right now but somehow I am going to find time to make these muffins. They look amazing!!!
Chelsea
You certainly have mastered this my dear! My oh my do those look scrumptious! I love that you used buttermilk for them too. A wonderful nutritious treat indeed Kelsey :-P
I think you need to do a muffin giveaway! bake a batch and mail it to a lucky winner!
See-there you go again being the muffin queen! They look fabulous! Definitely worthy of some famous cooking magazine.
That is amazing! They're not even flat or anything because they are so healthy. Phenomenal job girl!
Mmmmm....those look fabulous!!!
Girl you are the muffin QUEEN. Those look completely incredible, way better than anything you'd often find in a store or restaurant. I'm so impressed with your baking skills :)
I agree with Kristie - you are TOTALLY the muffin queen (and the recipe creation queen in general!!)
omgosh, those muffins look incredible!! why don't mine turn out like that?? (lol!)
(p.s. i would've devoured the pumpkin ones too. :))
Only 300 calories for such a huge muffin?! That's awesome!! They'd easily be >500 in any bakery. LOVE that they're oil free and low sugar! Thanks!
Those muffins look delish! I'm so impressed that you make up your own recipes. I can definitely follow a recipe, but creating new recipes is definitely a challenge for me.
You should write a little book on muffins. :-)
Leave it to you to go and make the most fantastic looking homemade muffin ever!
I'm so impressed at your baking skills. I can follow a recipe really well, but anything more than some minor tweaks is beyond me. I do try to create things on my own, but I've yet to have anything turn out quite right. Now I hesitate to try because I hate wasting so many ingredients!
So wish I could sink my teeth into one of these...
Hey lady I've missed you! Those muffins look delicious. I still have a weird connotation towards muffins- I don't know how to eat jsut one! lol
I'm back to blogging--Hope you had a wonderful summer : )
xo
Jocelyn
great! now open a bakery already!
WOW- those are gorgeous. I just want to rip the top off and go to town ;) GREAT job
I was rather excited when you told me about these :) My big brother is home now, so I may have my own go at producing a snacking squirrel masterpiece :)
Sadly most of the stars came off my nails whilst studying, which is not cool in the slightest!
Glad these muffins went better than the flat-topped ones, but there's something kind of cute about the flat topped ones!
Hope your having a good week
Sophie

Those look awesome! I'm a big fan of a hearty/healthy muffin - I would be all over those!
I think those look better than the ones you buy!!
Omg this look incredible!! I am all about jumbo muffins. I love them warm with a blob of peanut butter...mmmmm
What a lovely muffin! Those loook completely amazing and you made them with your own recipe??! kudos!
Oh my WORD!!!!!!! Those muffins look amazing! Can I come hang out at your house? =D
Seriously though, I can never come up with my own recipes.....congrats!
You most certainly did master the muffin! Holy moly YUM! :)
You are a MUFFIN MEISTER!
I bet the dense unfluffed ones were good, too.
~Missy
Oh man, I've got to try these . . .
would these work if ommitted the 1/2 cup brown sugar?
@Anonymous Yes, it would still work. You may need to add extra banana or fruit to add sweetness if you like, but otherwise, it should be fine :) xo
thats great thanks, can not wait to try these
I just made these for my office and they were gone in a second -- everyone loved them and couldn't tell how low in sugar they were. The recipe was so easy and they muffins turned out so moist and full of oats and oozy blueberries. Great job! Can't wait to try more of your recipes!
I am so happy you made them and they were such a hit! I would always bring them into my moms work for the ladies...but it would always be the male employees that could not stop eating them! haha xoxo@meredithk
