Chocolate Mud Muffins


Chocolate Mud Muffins

3/4 cup brown sugar
1/2 cup cocoa powder
1/4 cup carob powder
1/2 tsp sea salt
3 ripe mashed bananas
2 large eggs beaten

mix wet - mix dry - mix together
- sprinkle with chocolate chips to garnish -


Preheat Oven to 400F
*the high temperature pre-baking allows the muffins to rise higher*

Reduce Heat and Bake @ 380F
 20-25 minutes



Vegan Option: replace eggs with flax "eggs" by
 mixing 2 Tbsp ground flax seeds in 6 Tbsp water.

Gluten-Free Option: replace wheat flour
 for gluten-free flour and add 1/2 cup
yogurt-soygurt instead of 3 Tbsp.

                                                                               makes 9 muffins

wow, these look insanely delicious! i remember at a cafe i used to go to all the time when i was younger i used to love the chocolate mud pie which was like a chocolate tart with hot chocolate goozy ;) sauce! it was so good! i booked market this page on your lovely blog becasue i am going to make these! i love carob and this recipe seems simple enough! :)

Kelsey these look GOOD -- they remind me of a dessert my mom would make for us as kids: chocolate pudding with crushed oreos mixed in and gummy worms on top -- its called dirt dessert or something like that

These are looking mighty yummy right about now. Liked you cooking instructions: mix wet, mix dry, mix together. That's really all you need to say, teehee. Loved that you added bananas. I'd imagine these to be quite moist and delicious :-P

okay...i'm not even a chocolate fiend and i was practically salivating at the title and first picture combined. they look great! that and the combo of choco and banana is never bad, so this is probably a chocolate muffin i'd enjoy ;)

Holy cow - these look awesome!!! I would run and make these immediately, but we still have some frozen scuffins and half of an apple cobbler left to eat!

Wow! It's so cool to see you baking muffins as opposed to just buying them (not that there is ANYTHING wrong with the beautiful GF ones that you usually have!). I rarely make my own chocolate stuff because they never seem to turn out quite right.. but these look so rich and hearty :P

Oh! THOSE are the sort o' muffins that are just asking for their tops to be picked off. And they have bananas in them. I think I love you, is that too forward of me??
