Warming Winter Foods

I've been on an oatmeal kick lately - I can't get enough of it!

Cinnamon oatmeal cooked with egg whites, topped
with sliced strawberries and unsweetened carob chips

And because of the recent cold weather, my
oven has been busy roasting many vegetables...

Organic Tempeh from Green Cuisine

Tempeh, corn, peas, carrot, lotus root, daikon, broccoli, swiss chard, brussel sprouts, balsamic vinegar, mustard, onion, garlic, dill, sage, thyme, paprika and black pepper

And I find it so much easier to prepare roasted vegetables than stir-fries...

Question: Are there any meals/foods you prepare
differently in colder months, than in warmer months?

Love that you used lotus root in your roasted veggies!

In winter I'm all about making roasted vegetables and curries. But once the weather warms up, I eat far more raw, grilled, and steamed veggies, and I make more stir fries.

I am always roasting veggies in the winter months! But I think I'll probably continue that in the summer because I just can't get enough! :)

mm lotus root!!

it's difficult for me to stomach salads during the winter - just because i think warmer meals + veggies sit better with me. i also tend to drink more soups + stews, both of which i never do in the warmer months.

Your roasted veggies always look so amazing and absolutely perfect! What's your favorite roasting temp/time time to get perfectly roasted veggies?

I crave oatmeal all year round, but I love it even more in the winters!

Also in the winters I crave a lot more heartier meals, like stews and lasagna, but in the summers I crave more salads and no-cook meals!

Those roasted veggies look so good I always roast my vegetables in the winter, but wouldn't dream of it in the summer!

I eat more salads and fresh juices in the summer, and more stews and chilis typically in the winter.

Like you, I love roasting veggies when it is "cold" outside. We are already getting hot in Austin. It was 83 degrees yesterday! Thanks for sharing, sweet lady. I hope you have a splendid weekend full of sleep, laughter and love!

I love tempeh!!
I want to try lotus root so bad but I can't find it anywhere where I live :(

Most foods that I would normally BBQ in the summer end up in the oven over the winter. Although, we do tend to BBQ year round...

So now I'm craving a warm bowl of oatmeal. With strawberries...and carob chips! Ugh Barcelona why haven't you hopped on the carob trend yet?! Hahaha

Loving all the roasted veggies too--I'm all about the stir-frys, oatmeal and comforting soups during the colder months! Those at least have been super easy to make here :)
