EMPower ME


I planned on posting a delicious recipe for Banana Cinnamon Nutmeg 
Waffles this morning, but it was an ugly mess. Once I perfect the waffles,
 I will share them with all of you! So instead, I settled for Kefir and Fruit




Easier to digest than regular yogurt, with a 
nice effervescent note and subtle tangyness


I added frozen blueberries, sliced banana, and 
cantaloupe melon, topped with Saigon cinnamon


I wasen't in the mood to cook a big lunch, so I tossed a few things together instead...


Leftover grilled chicken breast, zucchini and onion, 
cottage cheese, salsa, and 2/3 of a brown rice tortilla 


The combination may look and sound a little 
strange, but the flavors blended together nicely


Oh, and I promised to show you pictures of my Truehope
EMPowerPlus supplement package when it came in the mail... 


It arrived last week, but I forgot to post the pictures


I ordered the 4 month supply pack


With the package deal, you get a free bottle of whatever support supplement 
you choose (see photos below) and a color coated weekly reminder pill box   


Each day of the week is a different color and is 
categorized by Morning, Noon, Evening, and Bedtime

These are what the capsules look like. I take 4 capsules, twice daily. It's been about a 
week since I have started and my family has already noticed a difference. Each day 
gets better and I am so excited that I can honestly feel a difference in my mood. I am so much more grounded and calm, my mind doesn't race, and I'm starting
 to feel like Kelsey again- laughing, smiling, dreaming, living, and loving :)


I will continue to keep everyone updated as I follow my new
 vitamin/mineral regime, but I have to go- my dinner is ready!


Roasted Kabocha Squash and Vegetables, fresh n' hot out the oven! 


Kabocha squash, broccoli, brussel sprouts, asparagus, swiss chard, onion, thyme, 
whole rubbed savory, cayenne, black pepper, lemon juice, coconut oil, and sea salt


Is it just me or do brussel sprouts look like alien heads? haha

I'm so glad to hear that those supplements are working for you! yay! Also, i think your wrap looks delicious and I am very curious about kefir. I have never tried it and don't even really know what it is...hmmm!

They do! I love those alien heads though. I'm glad you're feeling better. It's hard sometimes, but I'm glad you are working through it. As for the waffles...you'll get there. They can be tricky, but once you get it the way you like it...you will be so happy!

I have never tried keifer before, but my sister swears by it. I'm going to have to buy a container the next time I'm at Whole Foods. This post is making my stomach growl and my face smile. Thanks for sharing, sweet thing! I hope you have a beautiful day tomorrow.

I tried that kefir and I didn't really like it that much! I want to try the flavoured ones to see if I like them any better.

I love kefir! It's so tangy and perfect when paired with fruit. :D

I've still never tried kabocha squash! It doesn't seem to be a very common vegetable around here. One of these days I will find it! :D

I'm in love with roasted veggies right now - they are totally filling and delicious! My mom makes them every Sunday for our family dinner and I find that I'm craving them by the time Saturday night rolls around!
