This will likely become my default breakfast for many mornings to come
Ever since the fire that forced Green Cuisine Restaurant to
shut down, I've been wondering if/when they would re-open
I went down to check it out, and found this sign on their front door...
They are in the cleanup and repair process of getting back in business!!!
I'm looking forward to their re-opening; Market
Square is much too quiet since they've been closed
Chopped and washed Spinach, Kale, and Portobello Mushrooms
Broccoli Florets ...and a broccoli crown stub "growing"
out from a can of diced tomatoes in the background hehe
Diced Zucchini, Asparagus, Onion, and Tomato
While the vegetables were cooking on the stove, I had
3 Purple Japanese Sweet Potatoes roasting in the oven
410 Fahrenheit for 60 minutes
If you haven't tried Japanese Sweet Potato, you must!
It's similar in texture to a regular potato, but sweeter :)
When the vegetables were cooked, I added a Tomato Sauce Mixture which is based
on my Garlicky Tomato Dip, without the Garlic and with more Pasta Sauce vs. Salsa
I scooped the vegetable-sauce mixture over the baked sweet potatoes
Big bowl of healthy comfort food!

I'm surprised that I haven't tried Japanese sweet potatoes, considering I'm obsessed with Asian food in general, but they are now on my list!
Wait - Green Cuisine had a fire? I did not know this! I've actually never been to the restaurant. I've heard good and bad things about their food from various people. Although I have eaten their tempeh that we can get in the stores.
And I have tried a purple sweet potato before. I can't say I noticed much difference from other sweet potatoes, other than the colour.
PS - I'm planning a trip to Vic in august! Yay!
Comfort food is right! I would LOVE to try a purple sweet potato, but I've never seen them in my stores! And your new default breakfast looks faultless ;).

On the other hand, Japanese sweet potatoes are something you will inevitably eat while living in Japan even if you don't like it. They put it in almost anything. It is probably the third most used ingredient after green tea and soy beans.
I think I may have had them in sushi but that surely does not count. I need to find them post haste!
I've had purple potatoes before...but never ever heard of Japanese Sweet Potatoes. So interesting!
Green Cuisine looks adorable. I don't live there, but I hope it opens soon too! I love to see veggie restaurants thrive!
Every time I've walked by Green Cuisine I thought, "I really should try this place". I hope it is re-opened next time I visit!

Haven't even heard of Japanese Sweet potatoes, do they have another name? Where have I been. Recall you writing about that restaurant's fire, nice they will reopen, many do not.
I've never even heard of this type of sweet potato before but they look divine! I wonder if I can find them near me.

I had Japanese sweet potatoes once a long time ago (my papa is Japanese so we got some and roasted them :) ). I haven't had them in a loong while though. I tried out your muffin recipe yesterday (the zucchini chocolate chip ones) and OH MY they are DELICIOUS! thanks for sharing such a lovely recipe :)
