Cantaloupe Bowls and Carob Bites


Quick post recapping today's yummy meals


Starting off with a simple Fruit Bowl for Breakfast


1/2 Cantaloupe stuffed with sliced Organic Strawberries and Blackberries


This is about as creative as I get on Tuesday mornings lol


Lunch began in a pan: 1 Scrambled Whole Egg with  
2 Egg Whites, Spinach, Red Onion, and Black Pepper 


Topped with L'AncĂȘtre Mozarella Cheese and Eden Sauerkraut...


And tucked into a Brown Rice Tortilla
 before baking in the oven for a few minutes


Then onto Dinner...


I caught my Kabocha Squash having a threesome!


Are you thinking what i'm thinking? ...Because 
i'm thinking the yellow ones must be females! 


Haha I only kid! These are two different kinds of Roasted Kabocha Squash. 
One has yellow flesh and the other has orange flesh, both sweet and delicious


I topped it with Stir-Fried Vegetables: Broccoli, Kale,
Beet Greens, Leek, Bean Sprouts, Gai Lan, and Onion


And I finished Dinner with a little Dessert...


Nutty Carob Bites which are basically little Carob, Nut and Seed Energy Squares

My dad used to make me cantaloupe bowls when I was little. He'd fill it with ice cream and blueberries. Happy memories!

Squash already? But it's still August! I kid - I'm not really much of a stickler when it comes to eating foods only in certain seasons.

All your eats look so yum! Although I know for me that if I tried to eat that much volume I would be miserable (I hate having a full stomach, but my energy needs sometimes disagree with me!). I would love to eat an entire half a cantaloupe or a whole squash but when I do I regret it... so I incorporate lots of grains and beans and fats to add calories without too much bulk.

And I can't wait to hear about the nugget things. YUMMY!

Mmm...your dinner looks absolutely mouthwatering...nothin beats a heaping pile of roasted greens and kabocha squash, they really do make the best meal ever! Everything you've eaten to day floats my boat though, to be honest...delicious. You're such a healthy bunny! I mean...squirrel, lol! ;-) xyx

I, too, have been enjoying cantaloupe lately. Infact it might be one-a-my favorites at the moment. So refreshing.

Oh my gosh your eats look AMAZING! Carob bites are so addicting... I've seen those at Freddies before but resisted because I figured once I tried em I wouldn't be able to stop!

Oh my my my your foods look wonderful. That breakfast, although simple, sounds wonderful. And pretty.

I'm feeling that I need a little more kabocha in my life after seeing yours. SO GOOD. And the egg quesadilla looks incredible with that added time in the oven. Love it!
