Chicken Tenders and Honey Mustard Dip

I lived on Chicken Tenders as a kid. It didn't matter what restaurant
I went to with my family, me and my brother would always order Chicken
Strips and Fries; Breakfast, Lunch, and Dinner. Although I clearly learnt to
broaden my culinary taste buds, it's time I take a walk down memory
lane by creating a healthier version of my all-time favourite meal

Chicken Tenders
created by Snacking Squirrel

3/4 cup dry cereal flakes
1/2 cup brown rice cereal
(or use porridge flakes)

(or sub 1 Tbsp flax seeds)

1 large whole egg
1/2 medium lemon
2 tsp garlic powder
(or sub 1-2 garlic cloves)
1 tsp mustard powder

Step Five: toss into a large Ziploc bag

Step Six: squeeze some lemon juice into the bag

Step Seven: crack an egg on top

Step Eight: seal Ziploc bag and shake/massage/mix thoroughly

Step Nine: pour in your crushed dry cereal mixture

Step Ten: repeat step eight

Step Eleven: lay coated chicken tenders
on a baking pan lined with parchment paper

Step Twelve: preheat oven and bake at 350 Fahrenheit for 20 minutes

Serve with my Honey Mustard Dipping Sauce below

Honey Mustard Dip
created by Snacking Squirrel

1/2 cup light mayo
1-2 Tbsp honey
1 Tbsp brown mustard
(and/or yellow mustard)
1 pinch paprika

Step One: simply whisk everything together and pour into a small bowl

Is it just me or do you also see a person shaped and formed on
the top of the dip? It looks like a strange yoga man who is crossing
his legs, and waving his arms across his head! Do you see it too?

Now here, it looks like his arms are crossed, hands resting on opposite knees!

Okay, let's stop watching the clouds dip take different
shapes before anyone thinks we've "gone off our rocker"

And if you don't eat meat and would like a
challenge, you could try making this with tofu!

Mmmm, chicken strips. I love a good chicken strip every now and then, especially homemade. Your breading technique is interesting ;) Love the honey mustard dip. I will definitely have to try that out for, well, anything!

You know, leaving your breading so "chunky" makes the whole thing look spectacular.

Great dip recipe, too.

Do you always eat organic?

Since they're healthier, I can have them for breakfast right? You're making me drool!
And it's only 8am :D

That's the cutest cereal ever! And if only I weren't so lazy (or if only I had a normal oven)... I'd love to try this recipe.

I <3 the shake and bake method! Though this way is obviously much better for you than the boxed coating. Chicken tenders were my go-to food in restaurants as a kid too...I mean you just can't go wrong.

Gotta try this!

I love how you used cereals for the coating! That's such a great idea!

This meal makes it ok to eat cereal for dinner! And the honey mustard dip looks amazing! I would have never thought to add mayo.

Holy moly, you're so creative!! I don't know if I ever had chicken tenders growing up, but I did have chicken mcnuggets, so I reckon these would appeal to my inner child too :D

Haha oh man. I am reminded why raw chicken grosses me out. You take wonderfully clear and well-composed pictures even when they're of absolutely revolting subject matter (IMHO). Even when I was a meat-eater, I could never do the raw chicken thing. Hopefully it was a tasty dinner for you, once you cooked it! :)

That honey mustard dip sounds so good! I really like that the chicken tenders can be made in a bag like that ... it saves on clean-up.
