Roasted Potatoes and Miso Gravy


Potatoes and Gravy have long been established as both American and Canadian 
comfort foods, but there's nothing "comforting" about gravy's high cholesterol and 
calories. This is where the modern day Miso Gravy comes into play, offering a low-fat,
low calorie, and nutritious vegetarian/vegan alternative to traditional gravy 


Roasted Potatoes and Miso Gravy
adapted from Green Cuisine


Ingredients

4 medium potatoes
1 Tbsp vegetable oil
2 cups water
1 cup diced onions
2 cloves minced garlic
1/4 cup miso paste
2 Tbsp nutritional yeast
1 tsp apple cider vinegar
1/4 tsp paprika
1/4 tsp black pepper


Directions

A. Preheat oven to 400 Fahrenheit 
B. Wash and slice potatoes into wedges and dump them into baking pan lined with parchment paper, or lightly coating them with oil  
C. Place into oven and roast for 45-50 minutes, until lightly golden brown
D. Prepare the gravy by sauteing onions and garlic in oil for 3-5 minutes
E. Add water, spices, and miso paste, slowly bring to a boil while whisking together
F. Reduce heat to simmer and dissolve tapioca starch (or cornstarch) into water by whisking together until thickened and smooth
G. When potatoes are done, serve them in a bowl and pour the miso gravy on top 
H. Garnish with sliced scallions, parsley, or fresh herbs for added color (optional)


Makes 6 servings


I guarantee this is one side dish that will be gobbled up in seconds 
when served for Dinner guests, family members, or yourself; Everyone
will be fooled into thinking they're eating regular gravy


And the best part about it is you won't have to feel guilty about eating 
 a huge plateful or worry about catering to vegetarians/vegans or 
those with food allergies/intolerances to gluten, dairy, or eggs
It's just another way to make the Holidays less stressful for everyone!

I'm a big fan of the Naam Miso Gravy (which you can buy at Market on Yates in case you want to try it). But I still think regular gravy is awesome as well, and so is mushroom gravy! It's actually been shown that dietary cholesterol has minimal, if any, affects on the cholesterol profiles of the majority of people so that shouldn't be the reason to avoid regular gravy (or other cholesterol contaning foods). Not mention traditional gravy is also naturally dairy/egg free, and can easily be made gluten free as well :) Just sayin'

Now that I've rambled on forever, I think I'm going to make potato wedges tonight, and serve them up with the Naam Miso Gravy I just bought - but I will definitely need to try making my own some time soon :)

I can't argue with that, you definitely know your stuff. Everything in moderation. I hear ya on the mushroom gravy- so good! Yes, do make your own miso gravy sometime, i would LOVE to see how delicious it turns out :)

I looked for Miso paste at my grocery store and just didn't know where to look I guess. I'll have to ask someone next time I'm there.

It can be tricky to find. Either the Asian food aisle, refrigerated section (where the cheese is), or somewhere near the seaweeds, rice vinegar, and/or condiments is your best bet.

I was JUST thinking about how much I want to try miso gravy...your version looks really good.

I bet it would taste great atop your amazing stacks of roasted veggies :)
