Banana Chocolate Chunk Muffins


The muffins are back, and better than ever!


I must admit, I was worried that baking Gluten Free wouldn't
 be the same, but these muffins surely speak for themselves :)

 

Banana Chocolate Chunk Muffins
Recipe created by Snacking Squirrel


1/2 cup brown sugar
(or sweeten with stevia)
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp sea salt

1 cup plain yogurt
2 large mashed bananas
1/8 cup milk or water
1 tsp lemon juice


Directions:
1. Preheat oven to 400 Fahrenheit 
2. Mix all the dry ingredients separately in a bowl
3. In another bowl, mash the bananas
4. Combine the bananas with the rest of the wet ingredients
5. Pour wet mix into dry mix and fold gently, without over-stirring
6. Scoop generously into greased muffin pan, overflowing batter over rim
(this helps create big-top-bakery-style muffins)
7. Reduce oven temperature to 375 Fahrenheit and bake for 25 minutes


My Gluten Free Flour Blend:
 1 cup coconut flour, 1/2 cup brown rice flour, 
1/4 cup sorghum flour, 1/4 cup tapioca flour

All hail the muffin queen! Seriously, girl, you really rock the muffin aisle ;) I love how there is a big banana in the middle!

All you need to do is add a HUGE scoop of peanut butter, and it will be my perfect muffin! I have been lovin the pb+banana+chocolate combo as of late!!!!

Your muffins look so good, as always. Have you ever tried baking with coconut sugar? I actually have never tried myself, but I've heard it can be a good replacement for brown sugar (my body is not doing so well with the refined sugar these days). Anyway, they are beautiful! As are you.

Oh my gosh :D I don't have those particular flours at home but I've got lots of ripe bananers and chocolate chunks!! I guess I could swap the flour, these look super good!! I realize I'm not making much sense, lol the muffins are making me think with my belly ;)

I loved the texture of these muffins, but they turned out way too sweet for me (possibly because I didn't realize when I printed the recipe that "dark chocolate" meant unsweetened — I use semi-sweet organic chocolate). Without much fat or any protein to balance the sugar, they are unsatisfying and very very sweet. I prefer grainy and fruity muffins with a hint of chocolate or spice, but without so much sweetness. I think they would be good as a dessert, maybe warmed with some ice cream on top? They are improved if you butter them as you eat them. I'm sure people who love cake will like these. They were really fun to make!
