To Wheat or Not to Wheat...


Since following a gluten-free diet for over 2 months now, my symptoms 
haven't been getting better; In fact I feel worse now than I did eating gluten! 


I have been feeling more:

1. Tired
2. Depressed
3. Weakened immunity
4. Sensitive to environmental allergens
5. Brain fog and confusion
6. OCD (Obsessive Compulsive Disorder)
7. Increased hunger
8. Hypoglycemia
9. Hormone imbalances
10. Insomnia


My Celiac Tests were both negative (although one of them 
showed a possible boderline diagnosis of gluten intolerance)


I told my Doctor about what was going on and she suggested it may have 
actually been my medicine that was causing an allergic reaction 
and irritating my stomach. Over time, this allergic response would 
manifest itself as inflammatory symptoms, similar to those of gluten! 


This doesn't mean i'm going to go on a wheat-eating tirade but it does 
mean that there's a good possibility I will be able to have gluten 
in moderation, like I did when I first started this blog (ie. Spelt flour)


First, I need to switch my current medicine that is likely causing my
negative symptoms... then if I feel better, try adding small amounts of gluten 
back into my diet. Some of you may be worried which is okay, but I can assure 
you that if I am able to eat wheat, I am damn well going to eat it haha


I mean, it makes sense because I went months and months
 eating wheat and gluten again with no problems until 
I started my medication... clearly theres a correlation there!


Okay, that's it for now. Hope you found this semi-satisfying. Don't worry, if I start 
eating wheat again, I will continue posting gluten-free meals and recipes :)

That's really interesting about the medication! I wish I had a medication that I could correlate with my symptoms, but I have nothing, and my stomach hates EVERYTHING, so I just eat everything I like... for now. My Celiac blood work was all very normal 3 years ago, and the lab report said it doesn't suggest Celiac now or show any signs of it appearing in the future. I'm just a mess in general, but I think it's a mix of dysfunctional hormones and stomach issues are a side effect. The journey goes on.... sigh.

Anyway, enjoy your muffins sweet squirrel! If you aren't feeling better without gluten and your testa re negative, there's no reason to really avoid it unless you don't like it. :)

I think the most important thing is to do what feels right and makes you feel good! Whether that's with or without wheat, I'll still be here reading your blog!

dude. i'm saying this in all respect: stop worrying and analysing so much about u and food and your diseases u might have. u're so young and pretty. start living and have fun. u'll have enough time lateron to worry about your health etc.

Good luck on your journey introducing wheat back into your diet! I hope that if its the medication that all will be rectified by switching it up!

I don't have to go gluten free, but I love the gluten free flours. So, I post them all the time...cause I like'em! I hope you start feeling better soon! Glad to know you are getting it figured out!

yay! i hope you can eat it! i don't miss gluten, but i do know it makes searching for cheap, healthy food kind of old after a while. also, you might want to think if you ate anything else in subsitution (like more nuts, etc). maybe you are sensitive to one of THOSE?

the body is so intriguing, isn't it? Crazy how the meds can do that. I am glad you figuring this out. I bet you missed thos muffins. Heck I missed drooling over them!

Maybe lack of sun? Try Vitamin B B-6 and B-12 suppost to lift out of depressed because of lacking sun. It has been a long winter.

It sounds like because gluten intolerance is such a new thing in the medical field, even doctors don't have all the answers yet! I hope that you'll find a way of eating that works for you though. :)

This is great news!!! Honestly, I agree that you should stop worrying about it for awhile.

Depression and mental health greatly impacts our reactions to everything - including how we eat and digest foods....meaning that it isn't necessarily the food causing your symptoms but your depression etc. affecting your stomach in general...

In fact, I seen an N.D years ago and she didn't even consider eliminating these things despite the fact I had/have ALL the telltale signs of intolerances (bloating, horrible digestion, fatigue, joint pain, etc). She knew and said that it all comes back to me - my depression, my past, my MIND, my own issues....your thoughts and feelings affect you more than you know...

Hey, think about it - people climbing mountains and jumping off cliffs in hawaii or travelling the world - they're now obsessed about whether or not they took in the wrong foods, shouldn't have ate french fries or skipped those muffins...

Oh no. That all must be so frustrating. I hope you get everything figured out and get your meds switched as soon as you can. I can't imagine having to go through so many ups and diets, diet changes and the like. It will definitely be a nice treat for you to be able to add back some gluten though. Muffins all around! :) Feel better!

Does dairy bother you? I can't recall you ever cutting that out...keep the eggs, lose the cheese and ..sigh...yogurt?

Also, I am curious if you have tried cutting out flour *cringingbecauseyoumakeawesomemuffins*

I eat Ezekial wraps and breads, rice, rice cake, Mary's Gone Crackers, you can bake with oatmeal or oat bran....just nothing that says "flour" ..i.e: rice flour, corn flour, potato starch...etc.

All that being said...it's so cool to know we can avoid certain foods and still eat like no man's business.

You are so cute. I am happy for you that gluten doesnt seem to be the culprit. It is such a joy to eat! And your muffins! You have the most gorgeous muffins - Im glad they can make a return.
I know you will get through these issues. You seem like a strong girl with a good head. Ive been there and I know how hard it is - but with effort and safe experimentation you WILL find your balance.

I hope you can figure out what is causing those symptoms soon. It's all so interesting, yet frustrating, since the symptoms can come from a number of things.
