So Delicious, So What!?


I finally found So Delicious Unsweetened Coconut Milk at the store 
but I need your help because I don't know what I should make!


Any suggestions?

You can add it to your oatmeal instead of water or make baked oatmeal with coconut milk, it is delicious :)

I've never had it, but I would probably use it in a smoothie/shake! I want to know if it tastes slightly coconutty...but haven't wanted to commit to a big container. Let me know what you think!

i love it! i use it for choco-cado pudding! blend an avocado, 1c coconut milk, 1-2 tbsp cocoa and sweetener of choice. so thick and creamy!

One of your amazing muffin, granola recipe crumbled into some milk!! Or oats blended with some banana, milk and honey is delish! And a personal favourite is red lentil Dahl with potatoes and coconut milk;

1 cup red lentils
1 can coconut milk
1 tablespoon curry powder
2 russet potatoes
salt
pepper
1/3 cup yogourt, for garnish
cilantro, minced for garnish

Pick over lentils and rinse. In a heavy pot with a lid combine peas, milk curry powder and one cup of water. Bring to a boil then reduce to a simmer. Partially cover the pot and let cook for 15 minutes, stirring occasionally. Peel potatoes and chop into large chunks. Add potatoes to the pot and cover, cook for 10 minutes. Give it a good stir and add a big pinch of salt. Continue cooking until lentils and potatoes are tender, if it seems dry you can add a bit more water. When tender add a big grinding of fresh pepper and adjust for salt. Serve topped with yogourt and fresh cilantro.

This is totally random, but the nutrition label on Francine's bars is totally wrong. I wasn't sure if you were aware of it, but if you add up the calories per gram of fat/carb/protein, many of her bars are easily over 200 calories but the label says it's only 130 or 145 or something.

If you look at these two examples, you can see the discrepancy:

What a bummer!!! I see that the ingredients in this carton of coconut milk are just that---organic coconut milk. That's how it is supposed to be. I just looked at my carton, (same brand, unsweeted, etc) and there are far more additives now. I suppose it is due to the increased popularity of coconut milk. What a disappointment. Props to you, though! :)
