Ensalada de Taco Mexicano


I love making Taco Bowl Salads for Lunch. If you haven't tried one

Eden Organic Refried Pinto Beans


I used a Food for Life Brown Rice Tortilla for the shell


And topped it with Grilled Chicken, Refried Pinto Beans, Avocado, 
Tomato, Spinach, Red Onion, Salsa, Black Pepper, and Lemon Juice


The best way to eat these is with your hands by breaking 
off pieces of the taco bowl and scooping up the insides :)

I used to love taco bowls when I was little, but I haven't had them in a while because of being fried. What a good idea to make your own! (I missed your post the first time around!)

We're celebrating next weekend - but I still made the call! I can't wait to give him the card I picked out (that I think is super funny)!

I really need to make a taco salad bowl this week. So fun. And your comments are still ending up in spam darn it. So I wanted to reply here so you get it - bowls came from Target and I agree with you about sundried tomatoes seeming to be gourmetish. Just add them or roasted red bell peppers to dishes and they instantly become fancier ;-)

We arae celebrating fathers' day this coming weekend because we were out of town last weekend ... not 100% sure what we are doing yet.
