Herb Roasted Potato Wedges and Green Beans


Since I was a tad unsettled after posting these Frozen Potato Wedges, 
I knew it was only a matter of time that I would bake my own Oven Fries


1 small and 2 medium Red Potatoes


Sliced into wedges


Seasoned with a blend of Herbs and Spices: 
Yellow Mustard, Apple Cider Vinegar, Garlic Powder, Onion Powder, 
Chili Powder, Cayenne Pepper, Ground Rosemary, Dill, and Parsley Flakes


All tossed together in a bowl with the potato wedges


I spread the potatoes on a baking pan along with some
 Organic Green Beans, fresh from my neighbour's garden


Then I baked them for 45 minutes in the oven at 385 Fahrenheit 


Lightly Browned, slightly crispy, but still soft :)


I felt like they were a little naked and bland looking still, so
 I needed to think of a way to add some more colour... hmmm


I decided to make a simple Tomato Sauce...


Sauteed Diced White Onion with Pasta Sauce and Salsa

I am obsessed with roasted white potatoes! It's funny how they're given such a bad rap, so I used to think they were "unhealthy". :P But now I feel good about all the potassium I'm getting when I eat potatoes!

Mmmm, homemade potato wedges. I love to dunk them into sweet chili sauce. I like your spice combination - I usually just stick to salt, pepper, and garlic. Might have to get a little wild and crazy next time.

These look delicious! I typically avoid potatoes because of the starchiness but these look fantastic. I might just have to give potatoes another chance.
