Cinnamon Roasted Sweet Potatoes and Poached Eggs


When it comes to breakfast, Eggs and Toast is well known as being a
 traditional staple, but it can be easy to grow tired of the monotony of it


Although substituting sweet potatoes for bread will cost you
 in time, if you have the patience, it's worth making the switch


The trick is to throw a couple sweet potatoes in the oven the night before, and 
cook them until they are close to done (around 400F for 45-50 minutes). Then 
in the morning, slice the sweet potatoes in half before covering in spices and 
placing them back in the oven (finishing at 385-400F for 10 minutes or so)


I used one large Japanese Purple Sweet Potato and rubbed the 
slices with cinnamon and cayenne pepper. After baking in the oven, 
topped them with two poached eggs and an extra dusting of cayenne

Have you tried purple flesh sweet potatoes yet? They are really good, too! Another awesome combination is sweet potato with ground turkey :D
