Gluten Free & Dairy Free POWER Cookies


Gluten Free & Dairy Free "POWER" Cookies

Ingredients

2 cups rolled oats
1 cup quinoa flour
1 cup coconut sugar (or other)
3/4 cup unsweetened almond milk
1/2 cup extra virgin olive oil
1/2 cup amaranth/tapioca flour
1/2 cup carob chips
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1/2 cup shredded coconut
1/2 cup protein powder
2-3 tsp cinnamon
1-2 tsp sea salt


Directions

A. Preheat oven to 350 degrees F
B. Put everything into a bowl and mix thoroughly
C. Grease a baking sheet
D. Form dough into whatever size balls of cookies you want
E. Press dough balls gently onto pan
F. Bake for 20 minutes, cook, and eat!!!


I made these cookies after being deprived inspired by these cookies from Whole Foods


...and because they give me so much energy I feel like the Man Woman of Steel!!!


The recipe technically yields about 12 cookies, but I just made 6 big ones instead :)


I also had one for breakfast, and my gosh they were good

I am a total cookie monster, but seriously don't think I can handle any sugar for the next couple weeks. I totally overdid it!

These remind me of the oat cookies my grandmom used to make, but hers weren't gluten-free. I've wanted for an adaptation for a while. Yours look very good, I'll make some soon! :)
