Lazy People Salad


You cannot deny that no matter how many times people tell you, 
"Salads are so easy to make", when you actually get to the act of washing, 
cutting, and preparing a salad, you realize the amount of effort it takes!


Okay fine, it's not brain surgery or rocket science, but when you're tired the last thing
you want to do is stand infront of a cutting board for 10 minutes slicing vegetables.
 Let's not forget to account for the time it took you to wash them or even choose which
vegetables you were going to use in the first place! "Hmm spinach or romaine?"


At the risk of being confronted by the salad police, here's my
solution to a common problem: "The Lazy People Salad"


In a large mixing bowl I threw in 1 medium sliced English cucumber, 
1 cup leftover boiled baby potatoes that I cut in half, 1/3 cup canned 
pinto beans, 1/3 cup cottage cheese, 1/2 of a brown rice tortilla torn
into small pieces, 1 tsp coarse grind black pepper, and a pinch of salt


Then I tossed it together a couple of times


And voila! Our salad is complete...


Simply scoop it all on a plate and happy dig in. Just make sure you use a fork,
 because if you're too lazy to bother using cutlery then you're on your own haha


Sure, it may not be as pretty as my "Color-Me-Happy" Salad, but you could
upgrade this by tossing in some bright colored vegetables and a few leafy greens


And any leftovers you have in the fridge can join in too, provided they are free of mold


The only other salad solutions I can think of is to:
a) not be lazy or b) get someone to make one for you

I always think a meal will be quick to make and then get lost in the world of vegetable chopping. Love this salad!

It's like a very random potato salad. I bet a squirt of mustard or a few herbs would have been excellent in there as well :)

And my mom always says salad tastes better when someone else makes it.

I hate making salad for some strange reason ... but this lazy one doesn't sound too bad!
