Back to Basics


I haven't been as creative with my meals lately; I've been sticking to the basics...


Such as Scrambled Egg Breakfast Wraps


1 whole egg and1/3 cup egg whites scrambled together with 1 cup spinach, 
1/8 cup sauerkraut and diced red onion, tucked into a brown rice tortilla


 Then I grilled it in the George Foreman


When I'm feeling indecisive, I will opt for a "liquid lunch"


A deliciously healthy Green Smoothie 


I go a little crazy with the ingredients I toss in these. This one consists of 
green food powder, brown rice protein powder, hemp protein powder, 
banana, dates, red maca powder, kale, spinach, and a touch of lemon juice 


A prescription for good health!


Of course for dinner I am still enjoying my sweet potato dishes!


Sweet Potato and Tofu Vegetable Bake


White sweet potatoes, purple yams, cubed tofu, leeks,
 broccoli, baby bok choy, mushrooms and zucchini


Seasoned with thyme, rosemary, sage, paprika, coriander,
 chili flakes, cinnamon, lemon juice and apple cider vinegar


Then I placed it into the oven at 390 Fahrenheit for about an hour

I do the same. I find something I like and it gets cycled through my week at least 3 or 4 times for a few months. Then it's on to something else... So predictable. :)

I love purple yams! It's so sweet!!! I love how local Asian groceries carry them in cheap prices ;D
