Tempeh Taco Bowl Salad


I'm not sure if it's the weather or just me, but i've been 
feeling very melancholy lately and could use some cheering up... 


So I made a Tempeh Taco Bowl Salad to perk me up a bit


Tempeh, avocado, refried pinto beans, tomatoes, salsa, lettuce, 
lemon juice and black pepper, tucked into a baked tortilla 



Question: What type of foods or meals do you 
choose when you're feeling sad and need a boost?

oh I am so sorry you are feeling sad :(

To boost my spirits I go get some exercise and eat CHOCOLATE :) It is a natural happy food :) :

I think it's definitely the weather outside! When I am sad, I crave comfort foods - it can be sweet/saltry or savory!

hugshugshugs! i've been feeling a little blue lately, too. such a bummer, right? when i'm feeling down i gravitate toward carrots and hummus. or anything with hummus ;) and i love making chocolate avocado pudding with coconut cream. basically healthy foods always brighten my day.

and your taco bowl salad looks delicious! i happen to have some tempeh just sitting in my fridge...hmm...dinner tonight, perhaps :)? hope you feel better, kelsey!!!

Sometimes I crave a fresh salad but mostly I choose the bad stuff - like hot buttered toast! Feel better!

So far we've had snow, rain, and freezing rain today in Montreal- definitely feeling the weather blues too! Whenever I'm down, I usually crave carbs- pasta or bread usually do the trick. Your bowl looks very delicious- hope it helps to cheer you up!

That would definitely cheer me up, but for the most part a big crazy bowl of oats makes me happy! It has to be piled high with fun toppings too!

Mexican food is always good. I know what you mean though... I haven't been feeling my best either. Spring is almost here, don't worry!

I cannot eat tempeh raw for some reason, I cannot stand it. I wish I like it...

How in the world do you make the taco take a bowl form? So cool!

Most of the time I lose my appetite and can't eat when I'm sad but sometimes chocolate will appeal to me. Typical girl. ;)
