Call me greedy for hoarding the best Kabocha Squash a girl can find, but you'll
thank me when there's a shortage and I'm the only dealer one with the hookup!
Better to be prepared and stock up. Hey, we all have
our quirks; mine just happens to be squash gluttony
First I lined a large baking pan with parchment paper and added 2 cups
kale, 1 cup spinach, 1 cup broccoli florets, 3/4 cup baby bok choy, 1/2
red bell pepper, 5-6 spears of asparagus, and 1/4 cup diced red onion
Then I cut 2 medium-large kabocha squashes into cubes and seasoned them
with approximately 1/8 tsp each: Garlic powder, ground sage, dried dill, ground
rosemary, chili powder, cayenne pepper, ground ginger, and a pinch of cinnamon
with approximately 1/8 tsp each: Garlic powder, ground sage, dried dill, ground

Then they baked for 60-70 minutes in the oven, preheated at 400F
When they're done and still hot, I sprinkle them with 1-2 Tbsp
nutritional yeast and 1-2 tsp each of yellow and brown mustard
Note: The Kabocha Squash or Japanese Pumpkin can easily be confused
for it's less-starchier cousin, Buttercup Squash. Generally, the more dense
the squash the starchier it is; They're flavor is enhanced when baked/roasted
Because roasted squash has a similar consistency to baked potatoes,
they're extremely addictive. If anyone has a craving for roasted potato
wedges or fries, kabocha squash would be a wonderful substitute!
Normally I would enjoy these without the addition of mustard, but lately
I've found the acid to complement the natural sweetness on the squash
Warning: If you are not used to eating squash, the high-fiber
may make you feel bloated at first. It takes awhile for the body
to get used to eating larger volumes of fibrous starchy vegetables
These roasted squash nuggets are perfect for
leftovers and I use them in every way imaginable!
Ideas for Leftovers: PB and Squash, Parfait Bowls, Pita Pockets, Taco Bowls,
Stir-fries, Grilled Wraps or sprinkled with cinnamon for a healthy, savory dessert

I've never made squash like this before, but it looks awesome! Thanks so much for the idea. Yes, there are definitely foods I stock up on, especially if they are on sale. Usually it's frozen fruit, honey and spinach. Have a great Wednesday!

I hoard up on cranberries. Since they came back in season I bought 10 bags. They have their own shelf in my freezer so I'll be making cranberries all year long!!!
I stock up on Greek yogurt. I have 4 tubs sitting in my fridge right now!

I stock up on canned pumpkin for baking and Puffins cereal! This squash looks mighty good though. I might have to stock up when I go to the store. Thanks for sharing, sweet girl!

I ADORE that squash but every time I go to buy it I keep getting buttercup instead. Every squash here is labeled 'buttercup' so it's a matter of just picking the right ones. I used to be able to find the delicious starchy thick AWESOME kabochas (still labeled as buttercup) without fail a couple years ago but now I only ever seem to get the less flavourful, more watery buttercups. And I'm disappointed every. single. time. I miss my squash lovin'!

Hey Kelsey, I am from Victoria too! Today I was at Planet Organic for lunch and picked up the Roasted Root Vegetables from the deli case. It was amazingly delish and I thought you would love it! Give it a try some time and I recommend heating it up in the oven a bit to bring out the flavours and spices. SO YUMMY!!! Love the blog and I love seeing pictures of our beautiful city :) Keep it up!
this is, hands down, my favourite of all recipes that you've ever posted! this is definitely something that i can concoct without desiring to binge, so i will be doing this. i had no idea that roasted squash has a similar consistency to baked potatoes! i've totally been craving french fries, so i cannot wait for this experience! and, of course, i shall add KETCHUP! ;) x
I'm always too scared to stock up on produce, because I'm always afraid that it will spoil - but then I run out all the time (like now)!
Oh my Squash! I read this last night and decided I have to gove the kabochas a try. I picked one up after school today at the Rootcellar and I am so stoked on it. Im going to cook it like yours tonight! YAY hope it is as good as yours looks :)
